Fermentation often takes place in concrete or wooden vats, before barrel ageing, which can last from 12 to 18 months, depending on the cuvée. Barrel ageing, mostly in French oak, brings out subtle aromas of vanilla, toast and cedar, without ever overpowering the fruit.
