The Domaine Tollot-Beaut Aloxe-Corton Premier Cru Les Vercots 2023 stands out as a cuvée of character, from a confidential climate with a strong identity, historically linked to the Abbey of Cîteaux. Planted on an area of less than one hectare, the relatively young vines (planted in 2004 and 2014) benefit from a high density (11,000 vines/ha) and an ideal eastern exposure for slow, balanced ripening.
The Pinot Noir grape expresses a dense body and a tight grain of tannin, typical of this Aloxe-Corton terroir. After meticulous hand-picking, the vinification process favors finesse and precision: total de-stemming, optical sorting, gravity-fed vatting, gentle fermentation with daily punching of the cap for a dozen days, followed by pneumatic pressing.
The wine is matured in French oak barrels, 40% to 50% of which are new, with a single racking after malolactic fermentation, to preserve the integrity of the fruit and the nobility of the structure.
On the palate, Les Vercots 2023 is both racy and silky. The tannins are of exemplary maturity, never angular, offering a tight, velvety texture. The attack is generous, carried by aromas of black cherry, bramble and precious wood. The whole stretches to a saline finish, a sign of the terroir's origin.
In great vintages, this Premier Cru reveals itself to be particularly ample, almost full-bodied, without ever losing refinement.
It deserves a few years of cellaring to reach its peak, where it will unfold all the mineral complexity and depth typical of the finest expressions of Aloxe-Corton.
