This Domaine, coiled in the heart of the Region of Bourgogne in the village of Chorey-Les-Beaune, covers 25 hectares on the prestigious Coast of Beaune
Aloxe-Corton Premier Cru Les Fournières 2023 du Domaine Tollot-Beaut embodies the classic, racy expression of Pinot Noir from Côte de Beaune. Made from old vines (planted in 1974, 1977 and 1980) planted on 88 east-facing ares, this climate formerly associated with coal-fired furnaces (hence its name) benefits from deep soil and excellent exposure, favoring even, regular ripening.
Vinification follows a demanding approach: total de-stemming, meticulous optical sorting, gravity-fed vatting, followed by 10 to 12-day fermentation in open tanks with floating caps. Temperatures are controlled to 32°C, and daily punch-downs ensure gentle but complete Extraction. After pneumatic pressing and 48 hours of settling, the wine is transferred to French oak barrels, including 40-50% new wood, for 16-18 months of ageing with a single post-malo racking.
Les Fournières 2023 promises to be a full-bodied wine, with a solid structure and a precise grain of tannin. Behind a serious frame, it reveals with age complex aromas of black fruits, fine spices and elegant earthy notes, with a remarkable ageing potential of up to 20-25 years in great vintages.
