The Maison Cazals was founded in 1897 in Mesnil-sur-Oger by Ernest Cazals, a renowned cooper originally from the Hérault region of France who had married a Champagne woman.
Three generations have since succeeded one another at the head of the estate, and today DelpHine Cazals manages it with the same passion and enthusiasm to continually highlight this great terroir of Côte des blancs.
Delphine Cazals has run the company since the death of his father in 1996. The entire Cazals vineyard comprises 9 hectares of vines spread over 4 communes: Le Mesnil-sur-Oger, Oger, Vertus and Villeneuve. One part is therefore classified as Grand Cru and the other as Premier Cru. All vines are planted with Chardonnay to create cuvées with their own identity, full of finesse and aromatic power. The oceanic climate with continental influences is conducive to its development.
One of Maison Cazals' assets is an exceptional parcel of land classified as Grand Cru in a delimited area: Le Clos Cazals, covering 3.70 hectares of old vines in the village of Oger.

Soléra is a unique cuvée that illustrates Cazals' exceptional mastery of the eponymous technique. This blending and ageing process, begun in 2004, allows each new year to integrate with the previous ones, creating a perpetual Réserve that reflects the complexity and evolution of the Grand Cru terroirs of Oger and Mesnil sur Oger.
This Champagne is the fruit of a selection of the finest plots of Chardonnay, vinification in temperature-controlled vats and complete malolactic fermentation, all of which contribute to the quality and unique character of this cuvée. Aged on lees in vaulted cellars until disgorgement at the end of 2023, this Champagne has a fine dosage of 2 grams per liter, guaranteeing a perfect balance between aromatic richness and natural freshness.
Visually, it has a clear, crystalline yellow color, enlivened by dynamic effervescence and fine bubbles. The nose offers a complex, racy bouquet, with discreet notes of pear, slightly oxidative woody touches, and expressive aromas of grapefruit, white flowers and mint, adding irresistible freshness.
On the palate, this Champagne surprises with its liveliness from the first sip, with a clean, pure attack. The well-presented minerality supports an aromatic complexity dominated by dry fruits, exacerbating the sensation of roundness and depth. This rich, nuanced taste profile makes Solera an ideal companion for refined dishes such as seafood, oysters, white fish, as well as sushi and sashimi.
