Ranked among the top 30 Champagnes de vigneron, Champagne from Diebolt-Vallois embodies the excellence of the region's terroir.
Located in Côte des blancs, Domaine comprises 14 hectares of vines planted mainly with Chardonnay and located in Grand Cru Cramant and Premier Cru Cuis. The vineyard is managed using integrated pest management with a minimum of treatments and progressive grassing of the plots.
The wines of Réserve are made in vats or foudres and then stored in a cellar 14 meters underground for slow, regular aging, to bring out the typical roundness of Champagnes Diebolt-Vallois.
The Domaine Diebolt-Vallois is selected by Michelin-starred restaurants in Paris, such as Eric Fléchon's Epicure, Alain Passard's Arpège and Le Cinq, as well as the Flocon de Sel in Megève.
The 2018 Champagne Diebolt-Vallois brilliantly illustrates the outstanding winemaking expertise of this family-run business located in the prestigious Côte des blancs terroir. Only produced when years offer excellent climatic conditions, this 2018 vintage benefited from ideal weather, enabling the Chardonnay from which it is exclusively made to reach perfect ripeness.
As a result, this Blanc de blancs is the fruit of meticulous selection from the vines of Cuis, Épernay, Chouilly and the young vines of Cramant.
Vinification takes place in temperature-controlled vats to pRéserver the purity and finesse of the grape variety, while bringing out the delicate, mineral expression of the terroir.
To the eye, this cuvée has a bright, luminous color, punctuated by a fine, persistent effervescence. On the nose, it offers a rich, complex bouquet of ripe white fruit, fresh citrus and delicate floral notes, underpinned by the chalky minerality typical of Côte des blancs.
Elegant and harmonious on the palate, refreshing acidity balances ripe fruit and floral aromas. The whole evolves towards subtle notes of brioche and honey conferred by prolonged ageing on the lees. The fine dosage, between 3 and 5 g/L, accentuates the wine's purity and sophistication.
The Champagne Diebolt-Vallois 2018 is a fine expression of the exceptional 2018 vintage. It pairs perfectly with delicate dishes such as oysters, grilled shellfish or fish carpaccio, while also lending itself to tasting on its own, to appreciate all its aromatic complexity.
