Ranked among the top 30 Champagnes de vigneron, Champagne from Diebolt-Vallois embodies the excellence of the region's terroir.
Located in Côte des blancs, Domaine comprises 14 hectares of vines planted mainly with Chardonnay and located in Grand Cru Cramant and Premier Cru Cuis. The vineyard is managed using integrated pest management with a minimum of treatments and progressive grassing of the plots.
The wines of Réserve are made in vats or foudres and then stored in a cellar 14 meters underground for slow, regular aging, to bring out the typical roundness of Champagnes Diebolt-Vallois.
The Domaine Diebolt-Vallois is selected by Michelin-starred restaurants in Paris, such as Eric Fléchon's Epicure, Alain Passard's Arpège and Le Cinq, as well as the Flocon de Sel in Megève.
Cuvée Fleur de Passion 2014 from Diebolt-Vallois embodies the quintessential Chardonnay from the illustrious terroir of Cramant. The jewel in the estate's crown, this creation is made exclusively in years deemed exceptional, and thus echoes rigorous traditional know-how.
Upon opening, this exceptional Champagne displays a complex nose, marked by aromas of ripe citrus fruit, white flowers and a delicate hint of vanilla from its aging in Burgundy barrels. The olfactory profile is completed by fine mineral notes, testimony to the chalk in which the vines are deeply rooted.
On the palate, the 2014 vintage of Fleur de Passion reveals itself with precise structure and great purity. The complexity of the fruit is admirably preserved, without any intervention in malolactic fermentation, filtration or fining. Aromas of candied lemon, brioche and hazelnut intertwine in perfect harmony, supported by invigorating acidity that prolongs a lingering finish.
With a subtle dosage of 3 to 5 grams per liter, this cuvée combines roundness and freshness, offering perfect balance. Ideally served at 9°C in summer and between 10 and 11°C in winter, it benefits from a 15-minute aeration to fully express its character.
