An invitation from Olivier Bonville and Ferdinand Ruelle. Odyssée 319, a journey through the 319 villages that make up the Champagne appellation area.
With its 34,300 hectares spread over 319 crus, Champagne offers infinite possibilities.
It's on this multitude of identity terroirs that their observation focuses their observation.
Their passion for the wines of Champagne and their desire for new experiences, lead them out of the chalky subsoils of the Côte des blancs for new discoveries.
From the Grands Crus terroirs of Côte des blancs, including Avize, Oger and Le Mesnil-sur-Oger, Odyssée 319 reflects both the unique characteristics of each of these crus and those of its 2017 vintage, a year marked by spring frosts and high rainfall in July and August. These climatic conditions not only helped to reduce yields but also favored the concentration of aromas in the grapes harvested in early September, giving Champagne a remarkable aromatic intensity.
The nose is generous, with hints of caramel. This olfactory complexity is the result of careful vinification in temperature-controlled stainless steel vats and controlled malolactic fermentation.
The palate is round and voluptuous, carried by ripe fruit aromas, pastry nuances and a hint of bitterness on the finish, which adds depth and prolongs the pleasure of tasting.
With a very low dosage of 2g/L, Odyssée 319 is a Champagne Brut that fully respects and expresses its terroir of origin. It is best served at a temperature of between 10 and 12°C.
