Champagne Vilmart & Cie is a family-run Champagne house that embodies the very essence of Champagne craftsmanship and tradition.
Founded in 1890 by Désiré Vilmart, this house is located in the village of Rilly-la-Montagne, in the heart of France's Champagne region. For over a century, the Vilmart family has been committed to producing Champagnes of exceptional quality, with an emphasis on respect for the terroir and artisanal winemaking methods.
The house has remained in the family since its foundation, and the fifth generation today carries on this legacy with unwavering passion. This family continuity is essential to pRéserver the consistency and quality of Champagnes.
The vineyard covers 11 hectares, mainly located in Montagne de Reims, a region famous for its chalky soils and optimal sun exposure. These ideal vine-growing conditions enable the house to cultivate the classic grape varieties of Champagne, including Pinot Noir and Chardonnay.
The grapes come mainly from estate vineyards and are carefully selected for their exceptional quality. Each vineyard parcel is vinified separately to highlight the unique characteristics of each terroir.
The house's Champagnes are the fruit of a skilful combination of different harvest years, with a predominance of vintages, meaning that each bottle is the expression of an exceptional year. This approach highlights the richness and complexity of the Champagne terroir.
Vilmart & Cie's Les Blanches Voies 2013 is a 100% Chardonnay from vines Premier Cru in Rilly-la-Montagne. Carefully cultivated to Viticulture Durable and Haute Valeur Environnementale standards, these 60-year-old vines bear witness to Maison Vilmart's respect for its exceptional terroir. Vinification, without malolactic fermentation, is distinguished by maturation in 228-liter oak barrels for ten months, followed by 84 months of extended aging on the lees in the cellar.
This Champagne has a lemon-yellow color with silver highlights, and a fine, delicate effervescence. The powerful nose opens with aromas of jasmine, orange and peppermint, evolving towards more gourmand notes of bourbon vanilla, custard and apple crumble. On the palate, the attack is savory and enveloping, marked by flavors of marmalade and lemon tart, before giving way to a fresh finish, carried by notes of pear and white peach.
With a dosage of 4 g/l, Les Blanches Voies 2013 combines finesse and depth, and is ideal with dishes such as scallops, sweetbreads or seafood like oysters and caviar. Produced in a limited edition of 3600 numbered bottles, this cuvée embodies the elegance and precision of Vilmart & Cie's expertise.
