In the heart of the village of Aÿ, the House Bollinger enjoys a universal prestige that is no longer to be proven, always in search of excellence. Proof of this is the fact that on the one hand, Bollinger is one of the Rares to own and produce their own grapes for the production of their vintages, but that it is also the only one to still have a cooper in residence.

The origin of the House Bollinger is intimately linked to Athanase de Villermont (born in Cuis in 1763 and died in Aÿ in 1840), an admiral in the French army who distinguished himself in the American War of Independence and in particular at the Battle of the Chesapeake on April 29, 1781. A few years later, he inherited a vast Domaine family estate in the vicinity of Aÿ, a terroir renowned for the quality of its wines, which were not officially named "Champagne" until the creation of the Appellation d'Origine Contrôlée in 1936.

The Champagne Bollinger PN VZ19 is an exceptional cuvée that highlights Bollinger's unique expertise in making wines from the Pinot Noir grape variety. This fifth interpretation of the PN series is distinguished by its singular expression of the terroir of Verzenay, a classified village Grand Cru located to the north of the house's vineyards.
Bollinger PN VZ19 is a complex, delicate blend of 52% 2019 base-year wines and 48% Réserve wines, the oldest dating back to 2009. This combination of vintages gives Champagne remarkable depth and aromatic richness. The terroir of Verzenay, which makes up 40% of the blend, is complemented by wines from other prestigious villages such as Aÿ, Avenay, Louvois, Mutigny and Tauxières. This diversity of crus adds complexity to the wine, while preserving the distinctive identity of Verzenay.
The aromatic expression of Bollinger PN VZ19 is subtle and elegant. On the nose, it reveals delicate notes of white peach and wild strawberry, which evolve with aeration to reveal slightly creamy touches and aromas of noble yeast. A hint of hazelnut completes this harmonious bouquet. On the palate, the wine is both fresh and structured, with a mineral tension that evokes the chalky soils characteristic of the region. The finish is marked by persistent salinity, which prolongs the flavors and adds an extra dimension to the tasting experience.
The moderate dosage of 6 grams per liter maintains the wine's natural balance, while underlining the purity of its aromas. Aging, which is more than twice that required by the appellation, contributes to the maturity and complexity of Champagne. Generous red fruit aromas come to the fore, while spicy and floral notes add a captivating dimension to the taste profile.
The Bollinger PN VZ19 is a wine designed to be shared among enlightened connoisseurs in search of new expressions of Pinot Noir in Champagne. It should be served between 10 and 11°C to fully appreciate its finesse and aromatic nuances. This Champagne lends itself particularly well to refined food and wine pairings, such as sea bream ceviche with citrus fruits, veal tajine with peaches and spices, or lemon meringue pie for a touch of decadence at the end of the meal.
