Located in the heart of the prestigious Côte des blancs, Maison Waris-Hubert is the fruit of a long family tradition, today represented by Stéphanie and Olivier Waris, the fourth generation of winemakers.
Based in Avize, village Grand Cru, the Waris-Hubert family carefully cultivates exceptional terroirs, including the Grands Crus of Avize, Chouilly, Cramant, Oger, Aÿ, as well as the Premiers Crus of Grauves and Bisseuil. These clay-limestone soils are enhanced by meticulous working methods, including horse-drawn ploughing on their plots Grand Cru, demonstrating a deep respect for the environment.
Stéphanie and Olivier, who began developing their own vineyard in 1997, continue their quest for excellence by producing low dosage Champagnes, highlighting the purity, minerality and finesse of their terroirs. The first bottles were released in 2001, marking the beginning of a new era for the family. With each cuvée, the precision of work carried out by Maison Waris-Hubert translates into elegant, refined Champagnes, combining minerality and floral aromas.
Lilyale is an unfined Blanc de blancs Grand Cru, a pure reflection of the terroirs of Avize, Oger and Cramant. A blend of three vintages (2012, 2013 and 2018), this no-dosage Champagne expresses all the freshness and minerality of the clay-limestone soils of Côte des blancs. Its pale gold color with green highlights sparkles, with a fine, rapid effervescence.
The nose, intense from the moment it opens, reveals springtime aromas of lime blossom, mint and freshly cut grass, enhanced by white fruits such as mirabelle plum, before giving way to notes of brioche and viennoiserie.
On the palate, the attack is frank and ample, carried by a fine minerality and lively lemon notes. This Champagne is straightforward and precise, with great purity, and goes perfectly with cold prawns accompanied by a dill sauce, or sole meunière.
Lilyale is a gourmet wine that will appeal to lovers of unfined Champagnes, with an aging potential of 2 to 5 years.
