The Domaine Agrapart is located in Avize and its 12 ha vineyard is mostly spread over Avize, Oger, Cramant, and Oiry Grands Crus de la Côte des blancs.
The chalky soil, specific to Côte des blancs, enables the Chardonnay grape variety to be worked, especially known for bringing freshness, elegance and finesse to the wine.
Composed of 50 plots, some of which are over 65 years old, the average age of the vineyard is around 40 years. Pascal Agrapart favors the use of traditional methods of cultivation and vinification, and has decided to "parcelize" his cuvées since 1995, selecting three families of soils: one with superficial clay soils, another limestone, the last clay-limestone, all three sitting on the chalky base of Côte des blancs.
Pascal likes to recall: "My father used to tell me: 'You work your vineyard like a garden'."
This Venus cuvée is a Blanc de blancs parcel. The Chardonnay comes from an old 60-acre vineyard - La Fosse aux Pourceaux - planted in 1959 at Avize, Grand Cru from Côte des blancs. It is worked exclusively by man, with ploughing carried out by horse. The first horse, actually a mare, was named Venus.
Vinification is complete and carried out in demi-muids, without new wood, and the wines are bottled directly on cork, without prior filtration. The wines then spend 6 years on their lees, with manual riddling and disgorging 60 days before release to preserve all their natural freshness. No dosage is carried out, it's a Brut nature.
Cuvée Venus is the Rare pearl of the Domaine, filling just 10 barrels in great vintages. It perfectly combines power and finesse, roundness and tension, and is no match for the great chardonnay vintages of Côte de Beaune.
The nose, at first discreet with notes of citrus and Secs fruits, then develops a complex, explosive bouquet of white fruits, fresh honey, lemon bergamot, jasmine, fresh hazelnuts, truffle and torrefaction, with a slight chalky edge. The palate is round and supple, saline and mineral; the juice is ample and racy with its aromas of ripe orchard fruit, white rose, fresh lemon, energetic spices and lingers on a long, fresh and iodized finish.
Cuvée Venus 2018 will ideally accompany dishes such as pan-fried scallops or lobster ravioli, highlighting its finesse and elegance.
