Domaine Marguet: a biodynamic vision of Champagne.
Located at Ambonnay, in the heart of the Champagne region, Domaine Marguet stands out for its commitment to biodynamics, a Rare approach in Champagne. This conversion, initiated by Benoît Marguet, has profoundly transformed practices at Domaine.
While Benoit's parents Marguet sold their grapes to the house Krug, Benoit Marguet developed his own wine range with numerous parcel-based cuvées highlighting the diversity and richness of the old vines of Domaine.
As a fervent advocate of Biodynamics, Benoît Marguet, has revolutionized working methods by introducing biodynamic preparations, phytotherapy and aromatherapy. He has also introduced tillage with draught horses. The 8-hectare Domaine obtained Demeter certification in 2013.
Benoît's approach Marguet is guided by respect for natural balance, service to life, and delicate accompaniment of the winemaking process, avoiding any Brutality. Particular attention is paid to fermentation and ageing under wood. The use of sulfites is minimized.
At the same time, a significant effort has been made on dosage, drastically reduced or even eliminated on most cuvées. This development demonstrates that meticulous work in the vineyards produces wines that are authentic, expressive and naturally balanced by their terroir.
The culmination of this approach is represented by the cuvée Sapience, the result of a collaboration with oenologist Hervé Jestin.... See more ...
The Oger Grand Cru cuvée, produced by Laurent Vauversin, is made from 100% Chardonnay grapes and only 2,330 bottles are produced. This champagne is characterized by its richness and freshness, reflecting the chalky qualities of the Côte des Blancs terroir. The champagne is not dosed and contains very little sulfur in order to preserve the quality of the grapes.
In its pale golden color with green and silver highlights, this champagne reveals a fresh and mineral first nose, dominated by aromas of lime, green apple, and lime blossom. A touch of chalk, characteristic of the Oger terroir, mingles with notes of toast and fresh almonds. After aeration, more complex nuances appear, such as acacia honey and white peach, bringing a beautiful aromatic depth. On the palate, the attack is lively and precise, with refreshing acidity that balances a texture that is both smooth and taut. Flavors of Golden apple, Williams pear, and citrus zest dominate the mid-palate, accompanied by a salty minerality. The incredibly persistent finish reveals pastry notes that invite you to take another sip.
