The history of Domaine William Fèvre dates back to 1957 when William Fèvre, a visionary with a passion for wine, purchased and revitalized the family Domaine. His relentless quest for quality and his love for the terroir of Chablis led him to acquire precious parcels of vines in the appellation's best climats. Today, Domaine owns nearly 78 hectares of vines, the majority of which are located in the prestigious premier and grand crus of Chablis.
What sets Domaine William Fevre apart is its deep commitment to the unique terroir of Chablis. The Chablis region is renowned for its Kimmeridgian soil, made up of limestone and marl rich in marine fossils. This terroir gives Chablis wines their distinctive character, marked by elegant minerality and aromatic purity. Discover the excellence of Chablis Premier Cru Montée de Tonnerre 2018, a white wine born from an exceptional terroir, shaped by more than . This vintage, from the steep, stony slopes bordering the Serein River, embodies all the minerality and freshness so characteristic of the great wines of Chablis. Its , composed of alternating marl and marly limestone, gives this wine a unique character that is often imitated but never equaled.
Located on the right bank of the Serein, this 43-hectare vineyard extends the prestigious Les Clos and Blanchot Grands Crus. Its shallow soil, rich in white stones, and its privileged exposure make it one of the most remarkable Premiers Crus, rivalling the greatest. Each bottle reflects the authenticity and expertise of , where every detail is designed to enhance the pure expression of the terroir.
The 2018 vintage was marked by a , with generous rainfall in January and dry cold weather in February. Bud break occurred in mid-April, followed by rapid vegetative growth, favored by a warm and dry spring. Despite a few , flowering proceeded evenly at the end of May. The sunny summer, punctuated by a few rains in August, allowed the berries to reach optimal maturity. The harvest, which began on September 3, revealed golden grapes of exceptional quality, promising a wine of great finesse.
The vinification process, which respects the fruit, is based on traditional and meticulous methods. Pneumatic pressing, lasting between 1.5 and 2 hours, ensures delicate separation of the musts. Light static settling preserves the fine lees, which are essential for natural alcoholic and malolactic fermentation. The wine is aged for 19 months in stainless steel vats, with 5 to 6 months on fine lees in French oak barrels for 35% of the cuvée, adding a subtle touch of complexity.
