The history of Domaine William Fèvre dates back to 1957 when William Fèvre, a visionary with a passion for wine, purchased and revitalized the family Domaine. His relentless quest for quality and his love for the terroir of Chablis led him to acquire precious parcels of vines in the appellation's best climats. Today, Domaine owns nearly 78 hectares of vines, the majority of which are located in the prestigious premier and grand crus of Chablis.

Located on the heights of the Côte des Grands Crus, this 11.44-hectare vineyard benefits from dense, compact clay soil resting on a limestone slab, which gives the wine remarkable aging potential. Its name, "Les Preuses," has its roots in history: a deformation of the term "perreuse" (stone), in reference to the ancient Roman road that once crossed these lands. Today, this Grand Cru embodies the quintessence of Chablis: long, racy wines with great persistence, where each sip tells the story of the soul of Burgundy.
2018 was a year of contrasts, marked by a rainy winter followed by dry cold weather, then an early spring and a sunny summer. The frosts in May, which had no impact on the vines, gave way to uniform flowering and a generous summer of heat, punctuated by welcome rains in August. The harvest, which began on September 3, revealed golden, perfectly ripe grapes with abundant yields. A promising vintage, combining concentration, balance, and freshness.
At Domaine William Fèvre, every step counts in preserving the integrity of the fruit. The vinification follows a meticulous process: gentle pneumatic pressing to delicately extract the juices, vinification in stainless steel vats to preserve the aromatic purity, and 19 months of aging, including 5 to 6 months on fine lees in French oak barrels for 35% of the cuvée, bringing roundness and complexity without altering the wine's natural minerality.
