Ranked among the top 30 Champagnes de vigneron, Champagne from Diebolt-Vallois embodies the excellence of the region's terroir.
Located in Côte des blancs, Domaine comprises 14 hectares of vines planted mainly with Chardonnay and located in Grand Cru Cramant and Premier Cru Cuis. The vineyard is managed using integrated pest management with a minimum of treatments and progressive grassing of the plots.
The wines of Réserve are made in vats or foudres and then stored in a cellar 14 meters underground for slow, regular aging, to bring out the typical roundness of Champagnes Diebolt-Vallois.
The Domaine Diebolt-Vallois is selected by Michelin-starred restaurants in Paris, such as Eric Fréchon's Epicure, Alain Passard's Arpège and Le Cinq, as well as the Flocon de Sel in Megève.
Since 1978, Diebolt-Vallois has established itself as one of the leading names in the Côte des Blancs. Based in Cramant, an iconic village classified as Grand Cru, the house cultivates exceptional vineyards on chalky soils, guaranteeing incomparable minerality and freshness.
With a pale gold color and silvery highlights, the champagne reveals extremely fine bubbles forming a delicate and refined cordon. The nose reveals scents of candied citrus and white-fleshed fruits. After a few minutes in the glass, notes of brioche, almond, and a subtle woodiness can be detected. The attack on the palate is lively and racy. The tension is precise and crescendo during tasting. The flavors detected on the nose unfold with intensity. The chalky minerality, characteristic of Cramant, dominates in the middle of the palate and lingers in a long, tense and mouthwatering finish.
