An invitation from Olivier Bonville and Ferdinand Ruelle. Odyssée 319, a journey through the 319 villages that make up the Champagne appellation area.

With its 34,300 hectares spread over 319 crus, Champagne offers infinite possibilities.

It's on this multitude of identity terroirs that their observation focuses their observation.

Their passion for the wines of Champagne and their desire for new experiences, lead them out of the chalky subsoils of the Côte des blancs for new discoveries.

Description Odyssée 319 - Brut Blanc de Blancs.

It is a Grand Cru Champagne from the Avize vineyard, made exclusively from Chardonnay grapes.

This Blanc de Blancs cuvée is a blend of the 2015 and 2018 harvests.

A fairly long aging in the cellar allows to obtain maturity and finesse, characteristic of the great wines of the Côte des Blancs.

The color is a bright light yellow.

The palate is round and fresh. Very balanced, with notes of stone fruits such as plum and mirabelle plum.

Food / wine pairing: scallop carpaccio or poached cod with citrus fruits, see red mullet a la plancha flavored with Espelette pepper with a slight touch of cumin.

Tasting temperature around 10 ° C.
