Existing for almost three centuries now, it is one of the Rares houses of 01234-56789 to own a vineyard planted solely with Chardonnay, on terroirs classified exclusively as Premiers Crus and Grands Crus. It's around 1750 that we can find in the archives traces of the Gimonnets as winegrowers in Champagne, where they deliver their harvest to the Champagne trade. From generation to generation, they passed on their love of the vine. It wasn't until 1935 that Pierre Gimonnet began its own winemaking business. Michel, Pierre's son, joined the business in 1955. His passion and pragmatism enabled him to be a pioneer in parcel-based vinification, giving each terroir the opportunity to fully express itself. Today, Olivier and Didier Gimonnet embody the third generation, worthy heirs to an exceptional savoir-faire.

The Gimonnet brothers, Olivier and Didier, are at the helm of this Domaine of 28 ha of Chardonnay, classified Grand Cru and Premier Cru.
The Cuvée Spécial Club "Cuis 1 er cru" is a brand-new cuvée, and 2018 its first vintage.
It's a blend of several parcels from the village of Cuis, and more specifically from the lieu-dit Croix Blanche (85%), a 4.35 ha parcel. Only 7540 bottles have been produced.
After vinification, the wines remain in vat for 6 months. Then they wait 4 years on the lees before disgorging and dosage at 5g/L.
This Blanc de blancs offers a pale golden, sparkling color. The nose, fresh and elegant, first expresses itself on white fruits, apple and pear, then on brioche, vanilla and toast. The final notes are citrus, lemon, bergamot and fruit Secs. The palate is creamy and unctuous, yet lively. The fruitiness is ripe, stimulated by chamomile, mint and spices.
Finally we find chalk, for a salivating finish.
This Cuvée Spécial Club 2018 de Pierre Gimonnet will sublimate a shrimp and parmesan risotto or a vanilla raspberry coulis entremet.
