It's around 1750 that we can find in the archives traces of the Gimonnets as winegrowers in Champagne, where they deliver their harvest to the Champagne trade. From generation to generation, they passed on their love of the vine. It wasn't until 1935 that Pierre Gimonnet began its own winemaking business. Michel, Pierre's son, joined the business in 1955. His passion and pragmatism enabled him to be a pioneer in parcel-based vinification, giving each terroir the opportunity to fully express itself. Today, Olivier and Didier Gimonnet embody the third generation, worthy heirs to an exceptional savoir-faire.

A historic cuvée created in 1947, the aptly named Cuvée Gastronome was specially designed to accompany an entire meal. To achieve this feat, Maison Gimonnet & Fils uses the "petite mousse" method, a technique that creates bubbles of great finesse. Made exclusively from Chardonnay grapes, this champagne is a blend of 45% Chouilly Grand Cru, 20% Cramant Grand Cru, 3% Oger Grand Cru and 32% Premiers Crus from Cuis and Vertus.
The cuvée has a brilliant color with fine effervescence. The nose opens with elegant aromas of lemon, green apple, pear, and white flowers. A subtle mineral touch adds depth, reminiscent of the terroirs of the Côte des Blancs. With aeration, notes of almond and a slight iodine background appear. On the palate, the attack is straightforward, underscored by a vertical tension that gives the cuvée its structure. The body evolves into an airy and elegant structure, expressing flavors of citrus, white fruits, and a salty minerality that brings length and precision. The long, tense finish reveals a beautiful harmony between freshness and aromatic richness.
The 2020 Cuvée Gastronome stands out for its balance and purity, offering a champagne that is both accessible now and promising to evolve beautifully in the cellar, ideal for accompanying delicate gastronomic pairings.
