It's around 1750 that we can find in the archives traces of the Gimonnets as winegrowers in Champagne, where they deliver their harvest to the Champagne trade. From generation to generation, they passed on their love of the vine. It wasn't until 1935 that Pierre Gimonnet began its own winemaking business. Michel, Pierre's son, joined the business in 1955. His passion and pragmatism enabled him to be a pioneer in parcel-based vinification, giving each terroir the opportunity to fully express itself. Today, Olivier and Didier Gimonnet embody the third generation, worthy heirs to an exceptional savoir-faire.

An iconic house in the Côte des Blancs, Pierre Gimonnet & Fils is renowned for its pure and precise approach to Chardonnay. The 20th edition of the Champagne Brut Nature produced by the House, the Cuvée Œnophile 2018 is a blend of 2/3 Chardonnay grown on the Grand Cru terroirs of Cramant and Chouilly, and 1/3 Chardonnay grown on the Premier Cru of Cuis.
The color is a very light gold, enlivened by a fine and persistent effervescence. The nose, of great purity, opens with notes of white flowers, green apple, crisp pear, and fresh citrus. The mineral signature of the Cramant and Chouilly terroir quickly reveals itself, bringing tension and depth, accompanied by subtle hints of almond and wet stone. On the palate, the cuvée combines discretion and complexity. The attack is frank and straightforward, revealing lively acidity and a slender structure. Flavors of citrus, white fruits, and salty minerality follow one another harmoniously, offering a remarkable balance between intensity and elegance. The finish is long, vertical, and vibrant, leaving an impression of purity and exemplary precision.
This 2018 Cuvée Oenophile perfectly embodies the house's non-dosage style: a pure, racy champagne of great finesse, ideal for lovers of very pure Blanc de Blancs.
