A Unique Family Legacy

Today, the estate is firmly rooted in its history thanks to the complementary partnership between Nicole Moncuit, who has been orchestrating the winemaking process with masterful precision since 1977, and her brother Yves, who oversees the business side of the operation. Joined by Valérie, Nicole’s daughter, they uphold a rigorous and environmentally conscious winemaking philosophy, aiming to let the terroir fully express itself in every bottle.

The art of single-varietal wines and great terroir

The 20-hectare vineyard, located primarily in Le Mesnil-sur-Oger, gives pride of place to old vines, some of which are over 50 years old. With the exception of their exclusive and delicate Brut Rosé, the range is an ode to Chardonnay. Here, malolactic fermentation is not systematically halted, but rather there is a constant pursuit of maturity and balance, resulting in non-dosage or lightly dosed champagnes that shine with their natural freshness and integrity.

The Pierre Moncuit-Delos Cuvée is the signature cuvée of Champagne Pierre Moncuit, a Récoltant-Manipulant based in Mesnil-sur-Oger, one of the seventeen villages classified as Grand Cru in Champagne. Made exclusively from Chardonnay grapes grown on the chalky terroir of the Côte des Blancs, it candidly expresses the limestone character and aromatic precision unique to this village, renowned for the longevity of its sparkling wines.

Tasting Notes

The color is a pale gold with slightly green highlights—a sign of youth—with fine bubbles and a persistent stream of foam. On the nose, the Chardonnay from Mesnil-sur-Oger first reveals distinct citrus notes—lemon and white grapefruit—accompanied by white flowers, hawthorn, and acacia, followed by a mineral touch reminiscent of fresh chalk. With aeration, subtle hints of brioche and almond emerge, evidence of well-managed aging on the lees. On the palate, the attack is lively and the acidity is well-defined, providing structure without any dryness. The texture remains crystal-clear, carried by a creamy effervescence. The finish unfolds with a salty length characteristic of the Mesnil terroir, with a distinct aromatic persistence of citrus and minerality.

The lively acidity and salty minerality of this Blanc de Blancs Grand Cru make it a natural pairing for oysters and seafood platters, particularly langoustines and gray shrimp. It also pairs perfectly with lightly lemon-flavored smoked salmon or sole meunière, whose delicacy complements—without overpowering—the cuvée’s taut profile. As an aperitif, a few Comté cheese gougères are enough to bring out its mineral notes.

Aging Potential

After aging for about three years on racks, the Cuvée Pierre Moncuit-Delos can be enjoyed right now for the freshness of its youthful aromas. However, it will continue to evolve favorably over the next four to six years, during which the citrus notes will gradually give way to hints of dried fruit, toasted hazelnut, and honey. The natural acidity of the Mesnil-sur-Oger Grand Cru Chardonnay forms the backbone of this wine’s aging potential. Serve between 8 and 10 °C in a tulip-shaped glass, which better releases the aromatic bouquet than a narrow flute.

The vintage in the vineyard

The Cuvée Pierre Moncuit-Delos is a non-vintage cuvée, blended from successive harvests gathered from the house’s Grand Cru plots in Mesnil-sur-Oger. This village in the Côte des Blancs sits on deep chalky soils that give the Chardonnay high natural acidity and a lingering minerality. Champagne Pierre Moncuit’s philosophy centers on showcasing this unique terroir without diluting it with external additions: the grapes come exclusively from the family’s own vineyards, ensuring consistency in style from one cuvée to the next.

Work in the Cellar

Pressing is carried out with care to retain only the “cuvée,” the finest fraction of the juice. The free-run wines ferment in stainless steel tanks, preserving the Chardonnay’s aromatic clarity. After blending, the tirage initiates the second fermentation in the bottle according to the traditional Champagne method. Aging on slats for approximately three years allows for gradual autolysis of the lees, which enriches the texture and imparts the brioche-like nuances perceptible on the finish. Disgorgement and the addition of the dosage, calibrated at around 7 g/L, complete the production of this cuvée, which is made entirely from grapes grown on the family wine estate.
