It's around 1750 that we can find in the archives traces of the Gimonnets as winegrowers in Champagne, where they deliver their harvest to the Champagne trade. From generation to generation, they passed on their love of the vine. It wasn't until 1935 that Pierre Gimonnet began its own winemaking business. Michel, Pierre's son, joined the business in 1955. His passion and pragmatism enabled him to be a pioneer in parcel-based vinification, giving each terroir the opportunity to fully express itself. Today, Olivier and Didier Gimonnet embody the third generation, worthy heirs to an exceptional savoir-faire.

The Cuvée Cuis 1er Cru is made from 100% Chardonnay grapes. It is the purest expression of the Cuis terroir and the exceptional plots of the Côte des Blancs. Produced from a family vineyard cultivated since 1750, this cuvée embodies the Gimonnet style: a perfect combination of liveliness, lightness, and finesse, carried by a chalky minerality and racy acidity.
In the glass, the cuvée displays a pale color with golden highlights, enhanced by a fine and persistent effervescence, the signature of careful aging. On the nose, the bouquet opens with aromas of white flowers, candied lemon, green apple, and fresh hazelnut, enhanced by notes of honey. A chalky touch recalls the mineral origins of this exceptional terroir. On the palate, the attack is lively and dynamic, followed by roundness in the mid-palate and a fresh, taut finish. The flavors of white fruit, citrus, and brioche unfold elegantly, while the minerality brings a beautiful tension and remarkable aromatic persistence. The texture, both creamy and airy, makes this a champagne of great complexity, capable of seducing both novices and discerning connoisseurs alike.
Ideal as an aperitif, Cuvée Cuis is the perfect accompaniment to oysters, sushi, sea bass carpaccio or fresh goat's cheese. Served between 42°F and 46°F, it reveals its full aromatic palette and vibrant freshness
