The history of this family of winemakers is rooted in Cramant, one of the most famous villages in the Côte des Blancs, entirely classified as Grand Cru. The estate took on its modern form in 1959 under the leadership of Jacques Diebolt and his wife Nadia Vallois, who decided to combine their respective families’ wine-growing legacies to found Maison Diebolt-Vallois. Jacques, from a long line of Cramant winemakers, brought in top-tier vineyards, while Nadia contributed superb vineyards located in the Premier Cru-classified terroir of Cuis.
Together, they equipped the estate with modern tools, notably temperature-controlled stainless steel tanks, to preserve the original brilliance of their juices. The 2015 Diebolt-Vallois Fleur de Passion Champagne embodies, with immense distinction, the unique character of the Cramant terroir and the singularity of a great vintage. This exceptional cuvée is the result of meticulous winemaking and a very long aging process in the cellar, which lend it remarkable complexity. The estate’s jewel among its single-vineyard wines, Fleur de Passion is made exclusively from the oldest Chardonnay vines, ranging from 45 to 90 years old, ideally situated on the Grand Cru-classified terroir of Cramant. Yields here are naturally low, a demanding choice that promotes much more intense aromatic concentration in the berries.
The work in the cellar adheres to a philosophy of absolute purity, characterized by full vinification in old oak barrels and the deliberate halting of malolactic fermentation. This technical choice reveals a wine of crystalline clarity and remarkable finesse. After bottling in 2016, the bottles underwent a prolonged rest of 9 years of aging on the lees in the coolness of the house’s cellars before the disgorgement stage. Presented as an Extra-Brut with a very discreet dosage of just 3 grams per liter, this bottle retains exceptional integrity and energy.
On the palate, the essence of this Grand Cru is expressed through a complex bouquet where candied citrus, white flowers, and subtle brioche notes blend harmoniously, all supported by a chalky minerality of great elegance. On the palate, the cuvée captivates with its perfect balance between the mineral vibrancy of the Côte des Blancs terroir and the richness characteristic of the 2015 vintage.
