This Blanc de blancs from Maison Lallier is a bold expression of Chardonnay, combining the crystalline purity of the Grands Crus of Côte des blancs (Avize, Cramant, Oger) with the atypical mineral intensity of grapes from Aÿ, a terroir traditionally reserved for Pinot Noir. Inspired in the 90s by James Lallier, this cuvée embodies an innovative approach to the grape variety, revealing the unique imprint of two complementary terroirs.
The blend combines 70% base wines and 30% Réserve wines, offering a rich, balanced structure. Aged 36 months on lees and dosed at 8 g/L, it has a light yellow color with emerald highlights. The nose seduces with floral aromas of hawthorn and acacia, enhanced by toasted hazelnut and praline, with a subtle touch of buttery pastry. On the palate, the attack is lively and pure, marked by the freshness of the Chardonnay and the fullness of the Aÿ grape. Its chalky minerality carries through to a taut finish with notes of citrus, lemon and yuzu, leaving an impression of elegant, fresh length.
