What is the winemaking process like at Pol Roger?
Winemaking at Pol Roger is marked by a respect for tradition and a constant quest for quality. The grapes are gently pressed to Extra extract the purest juice. Alcoholic fermentation takes place in temperature-controlled stainless steel vats, followed by partial or total malolactic fermentation, depending on the cuvée. The wine is then bottled with a liqueur de tirage for the prise de mousse, before aging on laths for several years.

Blanc de blancs Vintage 2016 is made exclusively from Chardonnays from the Grands Crus of Côte des blancs: Oiry, Chouilly, Cramant, Avize, Oger and Le Mesnil-sur-Oger.
To the eye, La robe stands out for its crystalline clarity and silvery highlights, underlined by a fine, regular effervescence.
The first nose, discreet but precise, opens with a marked mineral framework (wet chalk, rubbed flint), then evolves towards floral notes (white flowers), yellow stone fruit (white cherry) and hints of fruit Secs. With aeration, the aromatic palette gains in complexity: zesty citrus, ripe eXOtic fruit and a subtle nuance of cocoa butter reveal themselves with restraint. The olfactory profile remains taut, pure and chiselled with finesse.
On the palate, the attack is straightforward and incisive, carried by remarkable freshness. The texture, fine and taut, offers a slightly chalky chew and an almost tactile substance. The mineral framework structures the whole, accompanied by citrus nuances (lemon zest, orange peel) and a perfectly integrated toasted/grilled register in the background.
The long, salivating finish stretches out on saline minerality and tonic acidity, ensuring a vibrant balance. This Blanc de blancs 2016 displays great precision and a promise of harmonious cellar evolution.
