It was in 1734 that Jacques Fourneaux created a Maison de Commerce de vin de Champagne as he was working with the great Benedictine abbeys who then owned the finest Champagne vineyards.

Jacques Fourneaux started this business in Reims, selling still Champagne red and white wines, followed by sparkling wines from these magnificent vineyards.

He is the third in the history of Champagne to start trading. The Fourneaux joined forces with Antoine Forest in the 1820s. The new business soon prospered under the name Forest-Fourneaux.

For a time, the company occupied the Hôtel le Vergeur in "Reims", before transferring, after the First World War, its business to rue de Tambour in the 13th-century home of the Comtes de Champagne.

In 1932, Pierre Taittinger acquired Château de la Marquetterie near Epernay from the Maison de Champagne Forest-Fourneaux. From 1945 to 1960, the company was managed by François Taittinger, assisted by his two brothers Jean and Claude, and it was during this period that the company moved into the cellars of the Saint-Nicaise abbey, built in the 13th century on Gallo-Roman chalk pits dating back to the 4th century. Taittinger Comtes de Champagne Blanc de Blancs Grands Crus 2014 embodies the excellence and nobility of Chardonnay. Produced from the most prestigious chalky terroirs of the Côte des Blancs, this champagne is the result of a rigorous selection of plots and artisanal expertise passed down from generation to generation.

The 2014 vintage, marked by an early growing season and a cool summer, offers remarkable freshness, delicacy, and energy. It reflects a subtle balance between the power of nature and human creativity, with Chardonnay as the common thread.

Terroir & Production

  • Terroir: Taittinger's vineyards cover 288 hectares, 37% of which are planted with Chardonnay. This champagne comes exclusively from the Grands Crus of the Côte des Blancs: Avize, Cramant, Chouilly, Oger, and Le Mesnil-sur-Oger.
  • Vinification: 6% to 8% of the wines are aged in barrels for 4 to 6 months, adding complexity and depth.
  • Aging: 10 years in cellars, with a potential aging potential of 10 years or more.
  • Dosage: 8-9 g/L

On tasting, the color is crystal clear, a sparkling yellow with silvery highlights. The bubbles are fine, delicate, and silky. On the nose, the champagne opens with chalky and chalky aromas, reminiscent of its terroir of origin. It then develops pastry notes (lemon meringue, hazelnut, almond), followed by citrus fruits, white flowers, and aromatic plants. On the palate, the bubbles are caressing and dynamic. This champagne offers beautiful freshness, an elegant texture, noble bitterness, and a lingering salty finish.

  • Scallop carpaccio, blue lobster, salmon roe, sole meunière.
  • Salmon roe: The lively acidity and citrus notes of the champagne balance the richness and creaminess of the salmon roe.

  • Sole meunière with julienned vegetables: The lightness of the fish and the crunchiness of the vegetables pair well with the freshness and minerality of Comtes de Champagne.
