It was Eugène-Aimé Salon who founded and gave his name to Maison Salon, based in Mesnil-sur-Oger, one of the 17 villages classified Grand Cru in the Champagne at the very top of the Champagnes quality hierarchy.
This is a Champagne made from the best plots planted with Chardonnay on Côte des blancs. This House produces only one Champagne: Cuvée Salon Grand Cru. Only exceptional years are Millésimées and the wines are cellared for an average of 10 years.
This is therefore a Champagne that is mono-terroir (the Côte des blancs), mono-cru (Le Mesnil-sur-Oger), mono-varietal (Chardonnay) and mono-millésime.
The House of Salon released just 37 Vintages in the 20th century.
Founded in 1905 by Aimé Salon on a principle that was radical at the time, Maison Salon has built its identity on three principles: no blending of grape varieties, no blending of vintages, and no diversification of terroirs. Champagne Salon 2015 is the forty-fifth vintage produced in over a century of history, made exclusively from the Grand Cru of Le Mesnil-sur-Oger, on the Côte des Blancs. This inherent rarity—produced only in years the House deems worthy of its exacting standards—grants each vintage the status of an exclusive allocation.
The Tasting
Golden hues with green and silvery highlights adorn the color of this Blanc de Blancs, punctuated by bubbles of remarkable finesse and a persistent stream of foam. On the nose, the initial aromas evoke white flowers, linden, and honeysuckle, before a chalky minerality characteristic of Mesnil-sur-Oger emerges with aeration, accompanied by nuances of citrus, peach, and a hint of hazelnut. On the palate, the attack is lively and precise, with a full-bodied, creamy texture supported by a salty finish that reflects the chalky terroir. The long, savory finish leaves lingering aromas of candied citrus, yellow tropical fruits, and brioche, with a minerality that persists well beyond the last sip.
Food and Wine Pairings
The chalky minerality and salty finish of the 2015 Champagne Salon make it a natural pairing for seafood: fine de claire oysters, roasted langoustines, or plain Breton lobster. For a more elaborate pairing, turbot or halibut in a light sauce, or line-caught sea bass with a hazelnut crust, perfectly complement the full-bodied texture of this cuvée. Caviar, aged Parmesan, and Kintoa AOP ham are pairings that harmonize remarkably well with the vintage’s aromatic richness.
Aging Potential
Champagne Salon 2015 can be enjoyed today, but it is expected to reach its full potential in the coming years, with a projected aging potential extending to 2050 and beyond. This potential is rooted in the naturally high acidity of the Chardonnay from Le Mesnil-sur-Oger, a decade of aging on slats that has enriched the wine with autolysis aromas, and the intrinsic quality of the 2015 vintage. Over time, citrus and white floral notes will gradually give way to hints of honey, dried fruit, and toasted brioche. Serve in a wide tulip glass, which better releases the bouquet than a traditional flute.
The Vintage in the Vineyard
The year 2015 in Champagne was marked by unusually early growth and heat. After a mild winter, the Chardonnay vines began to bud as early as April 14, followed by an early bloom starting on June 11. From mid-May to mid-August, a record-breaking drought and sustained sunshine concentrated the sugars in the berries. Life-saving rains and cool nights in August then preserved the acidity, allowing for harmonious ripening. The harvest began on September 8 in Mesnil-sur-Oger, on the deep chalky soils that give the Chardonnay its signature minerality and characteristic tension.
Work in the Cellar
True to its single-vineyard philosophy, Maison Salon conducts winemaking exclusively with grapes from the Grand Cru of Le Mesnil-sur-Oger, blended 100% from Chardonnay. After pressing, the free-run wines are produced without blending vintages or third-party grape varieties, then bottled using the traditional Champagne method for secondary fermentation. Champagne Salon 2015 was then aged for approximately ten years on racks, a prolonged aging process that promotes slow and deep autolysis of the lees—the source of the aromatic richness and creamy texture characteristic of the House. Disgorgement precedes release, with a Brut dosage that preserves the terroir’s mineral expression.
