Located in the heart of the prestigious Côte des blancs, Maison Waris-Hubert is the fruit of a long family tradition, today represented by Stéphanie and Olivier Waris, the fourth generation of winemakers.
Based in Avize, village Grand Cru, the Waris-Hubert family carefully cultivates exceptional terroirs, including the Grands Crus of Avize, Chouilly, Cramant, Oger, Aÿ, as well as the Premiers Crus of Grauves and Bisseuil. These clay-limestone soils are enhanced by meticulous working methods, including horse-drawn ploughing on their plots Grand Cru, demonstrating a deep respect for the environment.
Stéphanie and Olivier, who began developing their own vineyard in 1997, continue their quest for excellence by producing low dosage Champagnes, highlighting the purity, minerality and finesse of their terroirs. The first bottles were released in 2001, marking the beginning of a new era for the family. With each cuvée, the precision of work carried out by Maison Waris-Hubert translates into elegant, refined Champagnes, combining minerality and floral aromas.
Champagne Waris-Hubert Sophos Blanc de Blancs 2017 is an extra brut Grand Cru from the Avize terroir, made from 100% Chardonnay grapes.
This champagne stands out for its body, structure, and maturity. It offers a beautiful minerality, well-defined and harmonious, typical of the chalky soils of the Côte des Blancs. The Sophos cuvée is vinified with a very low dosage (extra brut), which highlights the purity and finesse of the Chardonnay.
The nose often reveals aromas of white flowers, citrus fruits, and a hint of mint. On the palate, it is rich and aromatic, with notes of white fruits (peach, pear), a beautiful freshness, and a lingering mineral finish.
This champagne is the perfect accompaniment to aperitifs, fish dishes, risottos, and fruity desserts. It is recommended to serve it between 9°C and 10°C to appreciate its full complexity.
The winemaking process includes alcoholic fermentation in oak barrels and prolonged ageing on lees, which gives this champagne depth and texture. The vines, which are around 90 years old, draw their richness from the limestone soils of Avize, which is reflected in the minerality and length on the palate.
