A story of family and terroir

Born from the union of two winemaking families, Maison Pertois-Moriset is today brilliantly led by Cécile and her husband Vincent Bauchet. Together, they have infused the estate with a spirit of modernity while upholding a tradition of excellence. The vineyard spans nearly 19 hectares, distributed in a unique way: approximately 12 hectares of Chardonnay in the Côte des Blancs (Le Mesnil-sur-Oger, Oger, Cramant, Chouilly) and 7 hectares of Pinot Noir in the southern slopes of Épernay.

The art of single-vineyard winemaking

Pertois-Moriset’s strength lies in a nearly “Burgundian” approach to Champagne. Each vineyard is vinified separately, often in oak (large casks and barrels), to preserve the identity and chalky minerality of each terroir. The house favors long aging on lees and very low dosages (Extra-Brut or Nature), resulting in wines of great integrity, depth, and a silky texture.

The “Édition” collection from Champagne Pertois-Moriset is based on a principle that is rare in Champagne: allowing time to work its full magic on cuvées from the chalky terroirs of the Côte des Blancs. The PM07 Edition embodies this approach through the 2020 vintage, a year recognized for its finesse rather than its sheer volume. With only 3,200 bottles produced, this 100% Chardonnay Grand Cru cuvée is aged for thirty-six months on its lees and will be disgorged in September 2024.

Tasting Notes

The color is a pale gold with slightly golden highlights, a sign of controlled ripeness, with fine bubbles and a persistent stream of foam. On the nose, the initial impressions evoke candied citrus, ripe apple, and dried pear. As it opens up, nuances of fresh hazelnut, lightly toasted brioche, and dried flowers develop, followed by a chalky and salty character characteristic of the soils of Mesnil-sur-Oger. On the palate, the attack is delicate, almost ethereal, before the body gradually gains depth. The creamy texture is supported by a still-vibrant acidity that ensures a long finish. The effervescence, perfectly integrated, never disrupts the aromatic profile. The finish lingers with notes of citrus zest, damp chalk, and fresh almond, with a remarkable saline persistence.

Food and Wine Pairings

The PM07 Edition’s Extra-Brut profile, its creamy texture, and its briny finish make it a natural pairing for seafood: aged oysters, a seafood platter, scallop tartare, or herb-roasted turbot. Partial winemaking in oak adds a roundness that also pairs well with white poultry in a light sauce or a well-aged Comté cheese.

Aging Potential

Disgorged in September 2024, the PM07 Edition has ample aging potential. It can be fully enjoyed today for its still-distinct youthful aromas and will continue to evolve favorably over the next five to ten years. The natural acidity of the Chardonnay, grown on chalky soils, combined with 36 months of autolysis on the lees, forms the foundation of this longevity. Over time, notes of toasted brioche, dried fruit, and honey will enrich the current profile. Serve between 10 and 12 °C in a tulip-shaped glass, which better releases the aromatic bouquet than a narrow flute.

The Vintage in the Vineyard

The 2020 vintage in Champagne was marked by an early growing season, favored by a dry and warm spring, followed by a summer of contrasting conditions. The cool nights toward the end of the season preserved the grapes’ natural acidity, an essential quality for Chardonnay from the Côte des Blancs. The hand harvest, carried out in accordance with Pertois-Moriset’s tradition, allowed for rigorous selection. The chalky soils of the Mesnil-sur-Oger region, which give the wines their signature mineral and salty character, fully expressed their potential in this vintage, which is renowned for its structural finesse rather than its volume.

Work in the Cellar

The hand-harvested grapes are pressed according to the rules of the Champagne method. The winemaking of the base wines was divided between oak barrels and vats for 53% of the blend, with the remainder aged in stainless steel tanks—an approach that combines controlled oxidation with the preservation of fruit character. After blending, bottling with cork stoppers in July 2021 initiated the second fermentation. Aging on racks for thirty-six months promoted gradual autolysis, which gave rise to the brioche and hazelnut notes perceptible on tasting. The disgorgement in September 2024 was followed by a dosage of 1.5 g/L, classifying the cuvée as extra-brut—a choice that preserves the terroir’s mineral expression. The PM07 Edition has been awarded the “Spécial Club” label by Le Club Trésors de Champagne, a distinction reserved for vintage cuvées selected by member winemakers.
