The Bonnaire house was founded in 1932 on one of the finest crus of the Champagne, the village of Cramant north of the Côte des blancs.
A family-run, independent firm specializing in Champagnes Blanc de blancs whose great finesse helped build its reputation, today it reigns over a 22-hectare vineyard classified as Grand Cru.
It was in 1932 that Fernand Bouquement founded his own house of Champagne. In the aftermath of the SecWorld War II, he was joined by his son-in-law André Bonnaire, who proved to be particularly passionate about vine growing and paid a great deal of attention to it. His son Jean-Louis took over and made Maison Bonnaire one of the most renowned in the Côte des blancs region. A particularly talented winemaker, he spent the last years of his life sharing his passion with his two sons, Jean-Etienne and Jean-Emmanuel, who today represent the fourth generation. Faithful to their father's memory and philosophy, they continue to produce chiseled Champagnes of great freshness and energy.

This single vineyard cuvée, from the prestigious Grand Cru terroir of Cramant, comes from the "Le Bateau" locality, characterized by calcareous and saline soils, a legacy of an ancient ocean. The Bonnaire brothers, Jean-Etienne and Jean-Emmanuel, continue to practice innovative viticulture here, notably with eco-grazing and the introduction of Kunekune pigs, a dwarf breed native to New Zealand, to maintain the plots naturally.
The 2017 vintage in Champagne was marked by contrasting weather conditions: a mild winter followed by an early and warm spring, then episodes of frost in April that reduced yields. The summer was dry and sunny, allowing the grapes to ripen optimally, despite a few localized storms in August. The harvest began at the end of August, producing Chardonnays with great aromatic freshness and beautiful concentration.
The Chardonnay grapes from the "Le Bateau" plot were vinified in temperature-controlled stainless steel vats, with full malolactic fermentation. After five years of aging on cork-covered slats, this cuvée was disgorged with a dosage of 1.5 g/L, for an Extra Brut style.
On tasting, this 2017 Blanc de Blancs seduces with its pale yellow color with bright golden highlights. The nose, with great finesse, reveals aromas of white flowers, candied lemon, vine peach, and a touch of toast, with a saline minerality characteristic of the terroir in the background. On the palate, the balance is remarkable: a lively and fresh attack, followed by a creamy texture and an aromatic palette blending Williams pear, fresh almond, and a hint of acacia honey. The long and vibrant finish leaves an impression of purity and persistence, with notes of citrus and chalk.
Food and wine pairings: This champagne is the perfect accompaniment to fresh oysters, salmon tartare, or wild mushroom risotto. For a sweet and savory touch, try pairing it with a thin apple tart with salted butter caramel.
