Established since 1763 in the renowned terroir of Chigny-les-Roses, Maison Cattier is one of the oldest and most respected family-owned houses in the Montagne de Reims. With artisanal expertise passed down through thirteen generations, this independent house excels in the art of crafting Premier Cru cuvées of unparalleled richness, fruitiness, and consistency.
Today, the House proudly upholds its high standards under the leadership of Alexandre Cattier, who embodies the estate’s winemaking expertise. The vineyard spans some thirty hectares, ideally situated in the heart of the Montagne de Reims, where Pinot Meunier and Pinot Noir find their ideal terroir. One of the house’s greatest treasures lies underground: its cuvées age in historic chalk cellars among the deepest in the region, dug out over four levels to provide absolute freshness during aging.
The strength of Cattier champagnes lies in their masterfully balanced vinosity and innate richness. A pioneer in eco-responsible viticulture (HVE-certified), the house prioritizes rigorous soil management to preserve the fruit’s brilliance. While the family’s elite technical expertise is celebrated worldwide—it notably oversees the production of the famous Armand de Brignac prestige cuvées—the eponymous range stands out for its silky texture and remarkably satiny bubbles, born of long aging in the cellar.
Produced from a historic vineyard of just 2.2 hectares located in the heart of the Montagne de Reims, near Chigny-les-Roses, Clos du Moulin is one of the most prestigious cuvées from the Cattier house. This rare, perfectly exposed terroir gives rise to a champagne of great character, crafted from a blend of three vintages carefully selected for their quality and aging potential. Aged for over six years in the cellar, then enhanced by a liqueur made from a wine aged for one year in oak barrels, this champagne develops remarkable depth while retaining impressive energy and precision. Each numbered bottle attests to the exclusive and intimate nature of this cuvée. The moderate dosage of 6 g/L perfectly preserves the balance between fullness and freshness.
The color is a brilliant golden yellow. The effervescence, regular and delicate, forms an elegant stream of fine bubbles that immediately highlights the wine’s refinement. The nose impresses with its richness and aromatic complexity. The bouquet blends intense notes of white peach, ripe melon, wild strawberry, blackcurrant, and fresh apple with more exotic nuances of passion fruit, mango, and lychee. Upon aeration, more indulgent hints of fig jam and rhubarb emerge, accompanied by subtle spicy notes of vanilla and cinnamon that add depth and sophistication. The attack on the palate is lively, taut, and particularly dynamic, carried by a lovely citrus freshness reminiscent of lemon and grapefruit. Very quickly, the texture gains in fullness and creaminess, revealing flavors of fresh raspberry, crisp white fruits, and ripe pineapple, enhanced by a light exotic touch of passion fruit. The wine perfectly balances energy, richness, and precision. The long, harmonious finish prolongs the sensations with refined notes of lightly caramelized pear, toasted hazelnut, and a delicate creamy touch that lends great elegance.
The ultimate gastronomic champagne, Clos du Moulin is the ideal accompaniment to delicate fish with light, airy sauces, as well as delicate cheeses such as a lightly aged tomme.
