Founded in 1906 in Aÿ, a village classified Grand Cru in Champagne, Lallier has forged a reputation for excellence thanks to its commitment to quality and the pure expression of its terroir. This village, located on Montagne de Reims, is renowned for its exceptional grapes, particularly Pinot Noir.

Which grape varieties and crus does Lallier favor?

Lallier focuses on two major grape varieties: Pinot Noir, for structure and power, and Chardonnay, for elegance and freshness. The grapes come mainly from Grands Crus and Premiers Crus, guaranteeing impeccable quality and a precise expression of the Champagne terroir.

What are the winemaking specifics at Lallier?

The house adopts a parcel-by-parcel approach, vinifying grapes separately to pRéserver the unique characteristics of each terroir. Malolactic fermentation is partial, retaining a certain liveliness while adding complexity. What's more, the cuvées benefit from prolonged ageing on fine lees in chalky cellars, often beyond the minimum requirements, which favours the development of tertiary aromas and texture on the palate.

From the Réflexion collection, R.021 Brut embodies the annual interpretation of Champagne terroir, capturing a harmonious balance between purity, freshness, intensity and depth, signatures of the Lallier style. Mainly composed of the 2021 harvest (70%), this Champagne is distinguished by the dominance of Pinot Noir (49%) from the crus of Montagne de Reims, Aÿ and Côte des Bar, combined with Chardonnay (44%) from Côtes de Blancs, Montgueux, and Meunier (7%) from Montagne de Reims and Vallée de la Marne.

After a minimum of 36 months aging on lees, this Champagne has a light yellow color with subtle golden highlights. The nose is straightforward, revealing citrus notes (lime, tangerine), enhanced by white flowers and mature aromas of brioche and fresh hazelnut, contributed by the wines of Réserve (30% of the 2020 harvest) and extended aging. On the palate, the attack is pure and fresh, with a delicate iodine sensation, giving way to the power of Pinot Noir and the silky roundness of Meunier, for a long, deep finish marked by elegant aromatic maturity.

With a dosage of 7 g/L, this Champagne Extra-Brut is best enjoyed in a glass between the flute and the wine glass, at a temperature of 10°C to 12°C. It goes perfectly with a refined aperitif, vegetable canapés, or more sophisticated dishes such as kingfisher ceviche with yuzu, smoked shellfish (lobster carabinero) or a seasonal vegetable tart.
