In the heart of the village of Aÿ, the House Bollinger enjoys a universal prestige that is no longer to be proven, always in search of excellence. Proof of this is the fact that on the one hand, Bollinger is one of the Rares to own and produce their own grapes for the production of their vintages, but that it is also the only one to still have a cooper in residence. 

The latter maintains the 3500 barrels, some of which are over 100 years old, day after day. A centuries-old know-how that the House Bollinger is committed to perpetuate.

The origin of the House Bollinger is intimately linked to Athanase de Villermont (born in Cuis in 1763 and died in Aÿ in 1840), an admiral in the French army who distinguished himself in the American War of Independence and in particular at the Battle of the Chesapeake on April 29, 1781. A few years later, he inherited a vast Domaine family estate in the vicinity of Aÿ, a terroir renowned for the quality of its wines, which were not officially named "Champagne" until the creation of the Appellation d'Origine Contrôlée in 1936.

Description Bollinger Rosé.

It's a Champagne, Brut, a blend of 62% Pinot Noir, 24% Chardonnay and 14% Pinot Meunier, with a few percent red wine added from the Verzenay and Ay vineyards.

It is also a blend of 85% Grands Crus and Premiers Crus. Champagne is aged for over 5 years in the deep cellars of Maison Bollinger.

La robe is partridge-eyed with elegant purple highlights.

On the nose and palate: a lovely presence of red berries such as wild strawberry, blueberry and burlat cherry, intimately blended, with perfect mastery, with citrus flavors such as lime or bergamot from southern Italy, with a hint of minerality and a beautiful finish of peppery vanilla.

Serve at around 8-10°C with canapés of goose or Gers duck foie gras, or Agen prunes Secs surrounded by a thin slice of Spanish pata negra. Perfect on grilled sea bass a la plancha or turbot in beurre blanc sauce. Powerful, round and divine on a dark chocolate fondant or a red fruit or greengage or Ente plum tart.

The care we take when receiving wines in our cellars enables us to detect bottles with imperfections (dirty or faded labels, damaged capsules, etc.). In such cases, they are systematically set aside and never put online! Our preparation team selects only bottles with perfect presentation for your orders!

It is these bottles with slight external defects that we present to you in the "Existe en imparfaite" selection. These bottles are, of course, of "irreproachable" gustatory quality, but suffer from slight defects on the label or cap.
