Domaine Marguet: a biodynamic vision of Champagne.
Located at Ambonnay, in the heart of the Champagne region, Domaine Marguet stands out for its commitment to biodynamics, a Rare approach in Champagne. This conversion, initiated by Benoît Marguet, has profoundly transformed practices at Domaine.
While Benoit's parents Marguet sold their grapes to the house Krug, Benoit Marguet developed his own wine range with numerous parcel-based cuvées highlighting the diversity and richness of the old vines of Domaine.
As a fervent advocate of Biodynamics, Benoît Marguet, has revolutionized working methods by introducing biodynamic preparations, phytotherapy and aromatherapy. He has also introduced tillage with draught horses. The 8-hectare Domaine obtained Demeter certification in 2013.
Benoît's approach Marguet is guided by respect for natural balance, service to life, and delicate accompaniment of the winemaking process, avoiding any Brutality. Particular attention is paid to fermentation and ageing under wood. The use of sulfites is minimized.
At the same time, a significant effort has been made on dosage, drastically reduced or even eliminated on most cuvées. This development demonstrates that meticulous work in the vineyards produces wines that are authentic, expressive and naturally balanced by their terroir.
The culmination of this approach is represented by the cuvée Sapience, the result of a collaboration with oenologist Hervé Jestin.... See more ...
The Avize Grand Cru cuvée, produced by Laurent Vauversin, is made from 100% Chardonnay grapes and only 1,756 bottles are produced. This champagne is characterized by its purity and finesse, with no added sugar (0 dosage, brut nature), reflecting the chalky qualities of the Avize terroir. The grapes are pressed using a Coquard press and vinified with natural yeasts, followed by nine months of aging on lees to preserve the wine's natural fluidity.
Adorned with a magnificent pale yellow color with bright golden highlights, this Champagne seduces with its clarity and the finesse of its bubbles. On the nose, it reveals fresh and lively aromas, dominated by lemon, green apple, and floral notes of acacia. After aeration, nuances of brioche, fresh almond, and a touch of acacia honey are added, while a chalky minerality, typical of Avize, brings depth. The attack on the palate is lively and precise, with a refreshing acidity that balances a subtle roundness. On the mid-palate, flavors of pear and white peach mingle with notes of toast and citrus zest. The texture, both creamy and taut, is carried by a remarkable mineral tension. The finish, long and salty, lingers on aromas of candied citrus and roasted hazelnut, with remarkable elegance.
