La Maison Trijol is located in the heart of the Cognac region, a few kilometers from Cognac. Part of the vineyard extends over Grande Champagne, Premier Cru and is planted mainly with Ugni-Blanc.
Their first still to distill was set up in 1859, and the House is now run by a fifth generation, Jean-Jacques Trijol.
Faithful to its Charter, Premiers Grands Crus has retained only the Cognacs Trijol Grande Champagne, a cru among the 6 crus of the Cognac region but ranked Premier Cru right at the top in the hierarchy of crus of Cognac for its qualities.
From the heart of the Petite Champagne terroir, Lot n°2 of the Dry Collection by Maison Maxime Trijol embodies a form Rare of elegance, the result of long ageing in wood and meticulous selection. A true ode to family craftsmanship handed down through six generations since 1859, this Très vieux Cognac expresses the quintessence of the cru through its refined structure and aromatic complexity.
La robe, a deep gold tending towards apricot Sec, precedes an immediately expressive nose: notes of prune, quince paste and tropical fruit intertwine with spicy, woody touches and a subtle rancio, while accents of vanilla and leather enrich the whole. On the palate, the attack is soft, almost caressing, before broadening out into warm, mellow aromas. The long, enveloping finish reveals a silky texture and a delicately spicy persistence.
Presented in a neat wooden box, this limited-edition Cognac (700 ml, 42%) is clearly intended for discerning connoisseurs. It calls for contemplative tasting, at room temperature, ideally at the end of a meal. A collector's item, but above all a mature, sincere and deeply endearing expression of Maison Trijol's savoir-faire.
