Paul Giraud

This very old family of winegrowers traces its origins back to around 1650. Since then, generation after generation, each Giraud has carried out the same gestures for nearly four centuries, accumulating a priceless heritage and knowledge.

Their vineyards, totaling 50 hectares, are both located on the Grande Champagne terroir classified Premier Cru in the Cognac Region, a classification at the very top of the qualitative hierarchy of Cognacs produced in the heart of the delimited production area.

The family's vineyards are located in the shadow of the Château of Montmorency-Bouteville, a famous French family close to the Crown of France, in Bouteville and Saint-Même, two villages renowned for the quality of their limestone soils.

The grapes are harvested by hand. Their Cognacs, some of which are 50 years old, are aged in Limousin oak barrels in very humid cellars, an optimal aging criterion sought after by the very professional Cognacs.

Description Paul Giraud Iridis XO.

Iridis, the floral Cognac from the Bouteville terroir, embodies the elegance and delicacy of the young XO from Grande Champagne, sublimating the family know-how of Maison Giraud. Made from Ugni-Blanc grapes and aged for around 15 years in Limousin oak barrels, this XO perfectly reflects the essence of finesse and lightness that define this exceptional terroir.

From the very first notes, Iridis seduces with its captivating floral bouquet, marked by iris, hyacinth and acacia. These aromas of white flowers, symbols of freshness and purity, evoke a light, refined springtime universe. The subtlety of these floral notes is then enhanced by warmer, deeper nuances: toasty, honeyed and slightly woody touches that enrich the aromatic palette and give this Cognac an unexpected intensity.

The choice of Limousin oak barrels plays a key role in this intensification. This noble wood, renowned for its ageing qualities, helps structure Cognac while respecting the delicacy of its aromas. It provides a harmonious balance between floral lightness and woody depth, offering a rich, nuanced tasting experience. The complexity of Iridis unfolds smoothly on the palate, blending floral freshness with a subtle honeyed finish, perfect for lovers of refined, well-balanced Cognacs.

The name Iridis, inspired by the Latin word for "iris", underlines the importance of this flower in the identity of this Cognac. The iris, a symbol of delicacy and prestige, perfectly embodies the noble, floral character of this cuvée. This floral inspiration is also reflected in the presentation, with a decanter elegantly decorated with vine flower and grape blossom motifs. This reflects the juxtaposition of strength and softness that characterizes Iridis, as does its refined box, designed to highlight the purity and lightness of the aromas.

The glass decanter, adorned with a natural beechwood stopper, provides a visual setting to match the quality of the Cognac it contains. The accompanying box is an extension of this refined springtime universe, making Iridis not only a taste experience but also a work of art to behold.

Monsieur Giraud and his son Paul have taken particular care in selecting the family Cognacs that embody this vision of finesse and elegance. Their wish to highlight the lightness of young XOs from Grande Champagne is perfectly fulfilled with Iridis. This Cognac is a real invitation to discover another facet of Cognac, where the delicacy of white flowers and the warmth of wood come together for a tasting both subtle and complex, aimed at demanding amateurs in search of new sensations.

The care we take when receiving wines in our cellars enables us to detect bottles with imperfections (dirty or faded labels, damaged capsules, etc.). In such cases, they are systematically set aside and never put online! Our preparation team selects only bottles with perfect presentation for your orders!

It is these bottles with slight external defects that we present to you in the "Existe en imparfaite" selection. These bottles are, of course, of "irreproachable" gustatory quality, but suffer from slight defects on the label or cap. We therefore offer them at a preferential price, making the pleasure of tasting them even more affordable.
