This Domaine, coiled in the heart of the Region of Bourgogne in the village of Chorey-Les-Beaune, covers 25 hectares on the prestigious Coast of Beaune
The Domaine Tollot-Beaut Corton Grand Cru 2023, from the southeast-facing "Les Combes" vineyard, follows in the tradition of the great reds of the Corton hillside. Planted in part as early as 1930, this small hectare of old, dense vines (11,000 vines/ha) expresses with intensity the power and nobility of this mythical terroir.
Vinification is carried out with the utmost care: complete de-stemming, rigorous optical sorting, gravity-fed vatting, followed by 13 to 14-day fermentation in open, floating-cap tanks with daily punching of the cap. Temperatures are carefully controlled down to 32°C to pRéserver preserve the freshness and precision of the fruit. Pressing is carried out pneumatically, followed by 48 hours of settling.
The wine is then aged for 16 months in French oak barrels, 50% of which are new, with a single racking after malolactic fermentation to preserve structure and aromatic depth.
This Corton 2023 delivers a dense, straightforward profile, supported by a serious tannic structure and fine mineral bitters. In its youth, it shows restraint but promise, with a dark structure and notes of black cherry, musk and warm stone. The ageing is perfectly integrated, bringing nuances of noble wood and sweet spices. The finish is long, energetic and built for ageing.
Wait 3 to 5 years before tasting for the first time. The ageing potential is remarkable, from 10 to 30 years depending on the vintage, to reveal all the complexity and breed of an authentic Corton Grand Cru, shaped by the hand of a winemaker faithful to his terroirs.
