The House of Bruno Paillard was born out of a simple yet ambitious desire to create a special, personal Champagne of the highest purity. So in 1981, at the age of only 27, Bruno Paillard embarked on the adventure of founding his own house, making it one of the youngest houses of Champagne. Today, its vineyard reaches a size of 32 hectares of vines, 12 of which are classified as Grand Cru, and each cuvée is the object of delicate attention as much as it is demanding.

When he started his own Champagne business at just 27 years old, Bruno Paillard first rented a winery and meticulously selected his grapes from rigorous and trusted winemakers, whom he knew from his past as a broker. He thus elaborates his Champagnes with a very personal style. At first, their distribution was exclusively for export and very quickly, the quality of the Champagnes of Bruno Paillard was recognized by the Anglo-Saxon critics from the 1990s. The Champagne Bruno Paillard N.P.U. Nec Plus Ultra 2009 is the ultimate expression of the desire to recreate the aromas of the great Champagnes of yesteryear. N.P.U., or "Nec Plus Ultra", is made only in years deemed exceptional, and 2009 is no exception. This vintage was characterized by a cold, windy winter, followed by a stormy spring and a hot & dry summer, enabling the grapes to reach exceptional ripeness. Harvesting began on September 10 with the Chardonnays from Oger and Mesnil-sur-Oger, and ended ten days later with the Pinots from Mailly.
Composed exclusively of grapes from six of the Champagne's most prestigious Grands Crus - Oger, Le Mesnil-sur-Oger, Chouilly, Verzenay, Mailly-Champagne and Bouzy - N.P.U. 2009 is an equitable blend of chardonnay and pinot noir. The vinification process, in keeping with House tradition Bruno Paillard, uses only the first press of grapes, fermented in small old oak barrels for 10 months, giving the wine its characteristic woody aromas.
After a second fermentation in bottle, the wine rests on its lees for 12 long years. It was disgorged in November 2022 and then matured for a further 18 months. With a low dosage of 4.5 g/L, this Champagne Extra-Brut fully expresses the purity of its terroir.
To the eye, N.P.U. 2009 reveals a brilliant gold color with very fine, regular effervescence. On the nose, initial aromas of bigarreau cherry mingle with candied citrus and powerful white flowers such as seringat and jasmine. On aeration, notes of calisson, nutmeg and fresh ginger appear, accompanied by sandalwood and peppermint, adding great freshness and remarkable complexity to the whole.
On the palate, the attack fully occupies the palate with a precise, elegant structure. The wine's persistent salinity blends with the fleshy, juicy feel of the fruit. The texture, melted and deep, unfolds in surprising length, sustained by a delicate freshness.
This exceptional Champagne is best served at a temperature of 8-10°C, in a wide-bodied glass with a narrow rim. It's the perfect accompaniment to land-sea pairings, such as langoustines with morel sauce, or Rossini-style scallops. With only 9,659 bottles and 379 magnums produced, N.P.U. Nec Plus Ultra 2009 is a precious cuvée Rare, to be savored slowly to appreciate all its nuances.
