Maison Bruno Paillard was born of a simple yet ambitious desire: to create a special, personal Champagne of the utmost purity.
The House of Bruno Paillard was born out of a simple yet ambitious desire to create a special, personal Champagne of the highest purity. So in 1981, at the age of only 27, Bruno Paillard embarked on the adventure of founding his own house, making it one of the youngest houses of Champagne. Today, its vineyard reaches a size of 32 hectares of vines, 12 of which are classified as Grand Cru, and each cuvée is the object of delicate attention as much as it is demanding.
When he started his own Champagne business at just 27 years old, Bruno Paillard first rented a winery and meticulously selected his grapes from rigorous and trusted winemakers, whom he knew from his past as a broker. He thus elaborates his Champagnes with a very personal style. At first, their distribution was exclusively for export and very quickly, the quality of the Champagnes of Bruno Paillard was recognized by the Anglo-Saxon critics from the 1990s. Then faced with the increasing demand for its vintages, Bruno Paillard begins the acquisition of vineyards in 1994: it will be the first 3 hectares of Grands Crus in Oger in Côte des blancs.... A monster of power and structure, the Champagne Bruno Paillard Assemblage 2015 is a faithful reflection of its vintage, which kicked off with a mild, damp autumn, followed by a cool but not excessive winter to build up significant Réserves of water, an ideally-conditioned spring and a hot & dry summer. August brought welcome precipitation, followed by cool dry weather in early September, allowing the grapes to ripen quickly and harmoniously. Harvesting began on September 2 and continued under optimal conditions until September 18.
The 2015 Assemblage is made exclusively from the first press, the purest, from Grands Crus and Premiers Crus. It is composed of 58% Pinot Noir and 42% Chardonnay, 25% of which is vinified in small old oak barrels. After seven years' cellaring, including 18 months' rest after disgorgement, this wine develops impressive concentration and a highly energetic structure. With a dosage Extra-Brut of 4.5 g/L, it expresses all the purity and richness of its terroirs.
To the eye, Assemblage 2015 has a brilliant golden color, accompanied by a sustained effervescence. The nose offers fresh aromas of wild strawberries evolving towards blackcurrant, followed by notes of blood orange and pink grapefruit. On aeration, powerful notes of wild immortelle, licorice and Sichuan pepper emerge, providing an intense, concentrated sensation.
On the palate, the attack is lively, combining fruity and saline flavors. Notes of candied orange peel and ripe black fruit unfold on a powerful frame, evolving to a long, elegant finish marked by cocoa powder and dry fruits.
This Champagne is ideal with slightly spicy, slow-cooked dishes, such as lamb shoulder confit with honey and mild spices, or red mullet fillets with saffron cream.
Finally, art lovers will appreciate the beauty of the label illustrated by Gérard Titus-Carmel, on the theme of "Élan". A painter, draughtsman and engraver, Titus-Carmel has taken part in over 500 group exhibitions and nearly 400 solo shows. He brings a unique artistic touch to this exceptional vintage.
