Maison Bruno Paillard was born of a simple yet ambitious desire: to create a special, personal Champagne of the utmost purity.
The House of Bruno Paillard was born out of a simple yet ambitious desire to create a special, personal Champagne of the highest purity. So in 1981, at the age of only 27, Bruno Paillard embarked on the adventure of founding his own house, making it one of the youngest houses of Champagne. Today, its vineyard reaches a size of 32 hectares of vines, 12 of which are classified as Grand Cru, and each cuvée is the object of delicate attention as much as it is demanding.
When he started his own Champagne business at just 27 years old, Bruno Paillard first rented a winery and meticulously selected his grapes from rigorous and trusted winemakers, whom he knew from his past as a broker. He thus elaborates his Champagnes with a very personal style. At first, their distribution was exclusively for export and very quickly, the quality of the Champagnes of Bruno Paillard was recognized by the Anglo-Saxon critics from the 1990s. Then faced with the increasing demand for its vintages, Bruno Paillard begins the acquisition of vineyards in 1994: it will be the first 3 hectares of Grands Crus in Oger in Côte des blancs.... Première Cuvée Extra-Brut, the emblematic cuvée of the Bruno Paillard house, is a blend of 32 separately vinified crus, offering remarkable complexity and quality to the final wine. The balance of grape varieties is 45% pinot noir, 33% chardonnay and 22% pinot meunier. The addition of wines from reserve - from 30% to 50% of the final blend - ensures the consistency of each cuvée. Aging on the lees for 3 years - more than twice the legal minimum - allows this Champagne to develop its full aromatic complexity.
After disgorging, Première Cuvée rests in the cellar for a further 5 months, guaranteeing perfect integration of aromas. With a dosage of less than 6 grams of sugar per liter, this cuvée expresses remarkable purity and freshness.
To the eye, the wine is a brilliant straw-gold color, reflecting the exclusive use of the first press of each cru and the presence of Chardonnay. The beading is lively, with extremely fine bubbles. On the nose, initial aromas are fresh and fruity, dominated by citrus notes such as lime and grapefruit, typical of Chardonnay. This is followed by aromas of red fruits such as redcurrant, raspberry and morello cherry, which are characteristic of pinot noir, while pinot meunier brings more suave and exotic notes after a few minutes' aeration.
On the palate, the attack is lively. The chalky minerality is marked, carried by notes of citrus fruit, almonds and toast. Aromas of redcurrant jelly and black fruits such as cherry, fig and blackberry develop over a second time, bringing gourmet fullness and good length. The finish is clean and refreshing.
For the more patient, this Champagne can be kept for longer, evolving towards more floral, spicy, toasty and jammy aromas.
