Located in the heart of the prestigious Côte des blancs, Maison Waris-Hubert is the fruit of a long family tradition, today represented by Stéphanie and Olivier Waris, the fourth generation of winemakers.
Based in Avize, village Grand Cru, the Waris-Hubert family carefully cultivates exceptional terroirs, including the Grands Crus of Avize, Chouilly, Cramant, Oger, Aÿ, as well as the Premiers Crus of Grauves and Bisseuil. These clay-limestone soils are enhanced by meticulous working methods, including horse-drawn ploughing on their plots Grand Cru, demonstrating a deep respect for the environment.
Stéphanie and Olivier, who began developing their own vineyard in 1997, continue their quest for excellence by producing low dosage Champagnes, highlighting the purity, minerality and finesse of their terroirs. The first bottles were released in 2001, marking the beginning of a new era for the family. With each cuvée, the precision of work carried out by Maison Waris-Hubert translates into elegant, refined Champagnes, combining minerality and floral aromas.
Blanc de blancs Grand Cru Millésimé 2015, Sophos is an exceptional wine from century-old vines at Avize. Aged 2 years in oak barrels, this monocru expresses all the maturity and power of the chalky terroir of Côte des blancs.
Its satiny, pale greenish-yellow color is enlivened by fine, lively bubbles. The nose reveals great aromatic complexity, with notes of pear, vine peach, chamomile, and iodized and roasted accents.
On the palate, Sophos combines structure and finesse, with a fruity body underpinned by lemony acidity, and a chalky minerality well integrated with the wood. The finish is long and flavorful, offering a mellow, harmonious sensation.
This Champagne Extra-Brut, with a dosage of 4 g/l, is a true gourmet wine, ideal for accompanying roasted crayfish, turbot steak or crispy camembert with diced pear. An exceptional Champagne at Réserver for the finest tables.
