Located in the heart of the prestigious Côte des blancs, Maison Waris-Hubert is the fruit of a long family tradition, today represented by Stéphanie and Olivier Waris, the fourth generation of winemakers.
Based in Avize, village Grand Cru, the Waris-Hubert family carefully cultivates exceptional terroirs, including the Grands Crus of Avize, Chouilly, Cramant, Oger, Aÿ, as well as the Premiers Crus of Grauves and Bisseuil. These clay-limestone soils are enhanced by meticulous working methods, including horse-drawn ploughing on their plots Grand Cru, demonstrating a deep respect for the environment.
Stéphanie and Olivier, who began developing their own vineyard in 1997, continue their quest for excellence by producing low dosage Champagnes, highlighting the purity, minerality and finesse of their terroirs. The first bottles were released in 2001, marking the beginning of a new era for the family. With each cuvée, the precision of work carried out by Maison Waris-Hubert translates into elegant, refined Champagnes, combining minerality and floral aromas.
an exceptional Champagne, the Blanc de blancs Grand Cru Clos de la Corneille comes exclusively from the eponymous parcel, located at the foot of the Waris-Hubert family home, at Avize. Planted in 1996 by Stéphanie and Olivier Waris, this parcel, organically farmed since 2012, also echoes the family's Finnish origins, "varis" meaning crow in Finnish. This 2012 vintage is a Brut nature (zero dosage), vinified from a single harvest year. Alcoholic fermentation takes place with indigenous yeasts at 16°C, without filtration or chilling. Aged 50% in oak barrels and 50% in stainless steel tanks, this Champagne has been aged for 10 years on laths at a constant temperature of 11°C.
The chalky dimension of this Champagne is immediately apparent on the nose, accompanied by subtle woody and spicy notes such as juniper berry and green pepper. On the palate, it surprises with refined bitters of orange peel, cocoa and spices. Its fine bubbles and yellow-gold color with green highlights reveal great elegance. This singular wine, a real UFO in the "Clos" category, reveals itself at the table, ideally accompanied by tuna tartare, rabbit with mustard or warm oysters. Decant to fully appreciate its complexity.
