The Bonnaire house was founded in 1932 on one of the finest crus of the Champagne, the village of Cramant north of the Côte des blancs.
A family-run, independent firm specializing in Champagnes Blanc de blancs whose great finesse helped build its reputation, today it reigns over a 22-hectare vineyard classified as Grand Cru.
It was in 1932 that Fernand Bouquement founded his own house of Champagne. In the aftermath of the SecWorld War II, he was joined by his son-in-law André Bonnaire, who proved to be particularly passionate about vine growing and paid a great deal of attention to it. His son Jean-Louis took over and made Maison Bonnaire one of the most renowned in the Côte des blancs region. A particularly talented winemaker, he spent the last years of his life sharing his passion with his two sons, Jean-Etienne and Jean-Emmanuel, who today represent the fourth generation. Faithful to their father's memory and philosophy, they continue to produce chiseled Champagnes of great freshness and energy.

Formerly known as Bonnaire Tradition L'Esprit du Temps, Champagne Bonnaire Les Versants Réserve embodies the very essence of the art of Champagne. This cuvée, the fruit of expertise passed down from generation to generation, is the result of a subtle blend of the region's three iconic grape varieties: 50% Chardonnay, 30% Pinot Noir, and 20% Meunier. These carefully selected grapes come from the estate's plots, spread across the sunny slopes of the Côte des Blancs, the generous slopes of the Marne Valley, and the prestigious hillsides of the Montagne de Reims.
This champagne is much more than just a sparkling wine: it is an invitation to discover the diversity and richness of the Champagne terroirs. The Grand Cru vineyards of Cramant bring elegant minerality and lively freshness, while those of Bouzy, also Grand Cru, give the wine a powerful structure and complex aromas. The Premier Cru plots of Cuis and Bergères-les-Vertus add a touch of fruitiness and finesse, while those of Fossoy, located in the Marne Valley, bring roundness and accessibility.
The vinification of this cuvée combines tradition and innovation. Mostly carried out in stainless steel vats to preserve the purity of the aromas, it is enriched by partial aging of around 10% in small oak barrels, which brings a subtle spicy note and additional depth. This marriage of modernity and tradition continues during aging on fine lees for a minimum of 30 months, allowing the wine to develop a smooth texture and remarkable aromatic complexity.
The dosage, deliberately measured at 4 g/L in Extra-Brut, highlights the wine's natural balance. It thus reveals the full aromatic palette of Champagne Bonnaire Les Versants Réserve, without artifice or excess sugar.
On tasting, this champagne seduces with its expressive nose, blending delicate floral notes, fresh citrus scents, and ripe fruit aromas. On the palate, the attack is lively and sapid, followed by a creamy texture and remarkable finesse. The bubbles, both light and persistent, carry intense and balanced flavors, before ending with a refreshing and mineral finish, characteristic of great terroir champagnes.
