The Bonnaire house was founded in 1932 on one of the finest crus of the Champagne, the village of Cramant north of the Côte des blancs.
A family-run, independent firm specializing in Champagnes Blanc de blancs whose great finesse helped build its reputation, today it reigns over a 22-hectare vineyard classified as Grand Cru.
It was in 1932 that Fernand Bouquement founded his own house of Champagne. In the aftermath of the SecWorld War II, he was joined by his son-in-law André Bonnaire, who proved to be particularly passionate about vine growing and paid a great deal of attention to it. Bonnaire "Les Harengs" Blanc de blancs 2021 is a Premier Cru from Bergères-les-Vertus, made exclusively from Chardonnay and vinified in oak barrels.
This Champagne Extra-Brut (3.25 g/L) has an alcohol content of 12.5% and stands out for its lively freshness and subtle minerality.
Its pale gold color with luminous highlights precedes an elegant nose blending white flowers, stone fruit and a hint of brioche.
On the palate, the attack is full and refined, with aromas of candied citrus, green apple and a long, chalky finish.
Serve at between 10° and 12°C, with oysters, fish tartare or citrus risotto.
This new wine embodies all the elegance and complexity of the great Blanc de blancs.
