Nestled in 600 hectares of greenery crossed by the River Paglia and Mount Nibbio, Castello Della Sala now boasts over 200 hectares of vineyards.
This historic Domaine is renowned for its exceptional white wines produced from emblematic grape varieties such as Chardonnay, Grechetto and Procanico. Its most emblematic wine, Cervaro della Sala, is renowned for its elegance and ageing potential, illustrating the combination of tradition and innovation that characterizes Maison Antinori.
Perched between 220 and 470 meters above sea level, the vineyards have clay-limestone soils, rich in fossilized shells, ideal for the production of great white wines, as well as magnificent pinot noir. Exposure and temperature variations at this altitude ensure ideal ripening of the grapes.
In the winery, every effort has been made to pRéserver preserve the freshness and intense aromas of the grapes. The modern vat room blends perfectly with the historic ageing cellar, located beneath the fortress and where the French oak barrels rest, to best reveal the expression of this great terroir.
Tasting notes:
A true icon of Domaine Castello Della Sala, this great white wine was named in honor of the Monaldeschi della Cervara family, owners of Château in the 14th century. Made from a blend of Chardonnay and Grechetto grapes, this cuvée undergoes barrel fermentation before being blended in stainless steel tanks and bottled. With its superb pale yellow color, the wine exhales notes of lemon zest, grapefruit and acacia. After aeration, vanilla and butter nuances add depth. The palate is elegant and remarkably fresh. Beautiful minerality mingles with white-fleshed fruit and citrus aromas, making us salivate. The long, persistent finish suggests good ageing potential.
