In the heart of the village of Aÿ, the House Bollinger enjoys a universal prestige that is no longer to be proven, always in search of excellence. Proof of this is the fact that on the one hand, Bollinger is one of the Rares to own and produce their own grapes for the production of their vintages, but that it is also the only one to still have a cooper in residence. 

The latter maintains the 3500 barrels, some of which are over 100 years old, day after day. A centuries-old know-how that the House Bollinger is committed to perpetuate.

The origin of the House Bollinger is intimately linked to Athanase de Villermont (born in Cuis in 1763 and died in Aÿ in 1840), an admiral in the French army who distinguished himself in the American War of Independence and in particular at the Battle of the Chesapeake on April 29, 1781. A few years later, he inherited a vast Domaine family estate in the vicinity of Aÿ, a terroir renowned for the quality of its wines, which were not officially named "Champagne" until the creation of the Appellation d'Origine Contrôlée in 1936.

Description Bollinger La Côte aux Enfants Blanc de Noirs 2013.

La Côte aux Enfants is a steeply sloping 4-hectare limestone parcel in a single block in the commune of Aÿ Grand Cru. 

For the record, legend has it that in the past, only children could climb it. It is made up of two slopes : the south is vinified as a still red wine, the famous Côteaux Champenois from the eponymous parcel ; the north was previously used exclusively for blending La Grande Année Rosé but, aware of its potential, Maison Bollinger had the ambition to make a great Champagne Millésimé there, this Blanc de noirs La Côte aux Enfants. It completes the 100% Pinot Noir range, alongside the Cuvée PN and the Vieilles Vignes Françaises, illustrating the precision with which he has mastered this grape variety. The vines have been worked organically since 2009.

2013 was a rainy spring combined with a hot, sunny summer. The harvest offered grapes of great quality, and the cool temperatures ensured fresh, elegant wines. Fermentation takes place in small oak barrels, and the wine matures under cork for 8 years. Finally, the dosage is 4g/L.

The robe of this Champagne is a deep golden color with yellow highlights.

The nose is generous with ripe fruit, fruit jelly and almond paste, complemented by the freshness of mirabelle plum, vine peach and tart apples. Then it evolves on honey, dried flowers, hazelnut, cinnamon and toasted notes. 

The palate is firm and rich, on ripe fruit, candied red fruit, fresh buttered bread, pie crust and cinnamon. We find the freshness of the nose, with lovely acidity of apricot, citrus, strawberry and yellow lemon. The tasting ends with beautiful bitters, wax, chalk and a hint of menthol and salt. A racy, mineral wine !

This Champagne Blanc de noirs La Côte aux Enfants 2013 from Maison Bollinger will sublimate a fine honey-roasted quail or an old Beaufort.
