Champagne Vilmart & Cie is a family-run Champagne house that embodies the very essence of Champagne craftsmanship and tradition.
Founded in 1890 by Désiré Vilmart, this house is located in the village of Rilly-la-Montagne, in the heart of France's Champagne region. For over a century, the Vilmart family has been committed to producing Champagnes of exceptional quality, with an emphasis on respect for the terroir and artisanal winemaking methods.
The house has remained in the family since its foundation, and the fifth generation today carries on this legacy with unwavering passion. This family continuity is essential to pRéserver the consistency and quality of Champagnes.
The vineyard covers 11 hectares, mainly located in Montagne de Reims, a region famous for its chalky soils and optimal sun exposure. These ideal vine-growing conditions enable the house to cultivate the classic grape varieties of Champagne, including Pinot Noir and Chardonnay.
The grapes come mainly from estate vineyards and are carefully selected for their exceptional quality. Each vineyard parcel is vinified separately to highlight the unique characteristics of each terroir.
The house's Champagnes are the fruit of a skilful combination of different harvest years, with a predominance of vintages, meaning that each bottle is the expression of an exceptional year. This approach highlights the richness and complexity of the Champagne terroir.
The Champagne Vilmart & Cie Grand Cellier d'Or 2019 is a true expression of the boldness and elegance that characterizes the house. This cuvée, composed of 80% Chardonnay and 20% Pinot Noir from fifty-year-old vines classified Premier Cru, offers a mature aromatic profile and assertive texture, ideal for discerning connoisseurs looking for a gourmet Champagne.
La robe's golden yellow color, animated by a fine effervescence, bears witness to its long aging on lees (42 months) and the absence of malolactic fermentation. The result is firm structure, freshness and aromatic purity. The nose opens with generous scents of black cherry, blood orange, star anise and menthol. After a few moments, this complex bouquet is enriched by pastry and biscuity notes, passion fruit accents and a light floral touch.
On the palate, the attack reveals a striking balance between richness and freshness, with a hint of acidity that enhances the butter and fruit Secs nuances. The creamy, chiselled texture reflects ten months' ageing in 228-liter oak barrels, which adds a subtle woody touch without ever dominating. The 7 g/l dosage is perfectly integrated, bringing a discreet roundness.
This Champagne is an ideal companion for gourmet dishes. Its structure and aromatic complexity are a perfect match for firm textures such as langoustines or white meats, served with reduced sauces. Caviar, with its delicate salinity, will also sublimate the finesse of this cuvée.
