An invitation from Olivier Bonville and Ferdinand Ruelle. Odyssée 319, a journey through the 319 villages that make up the Champagne appellation area.

With its 34,300 hectares spread over 319 crus, Champagne offers infinite possibilities.

It's on this multitude of identity terroirs that their observation focuses their observation.

Their passion for the wines of Champagne and their desire for new experiences, lead them out of the chalky subsoils of the Côte des blancs for new discoveries.

Description Odyssée 319 - Rosé.

This Rosé symbolizing the beginnings of this Odyssey is composed of 90% Chardonnay from the Grand Cru of Avize, in the Côte des blancs and 10% Pinot Noir from the Grand Cru terroir of Ambonnay in the Montagne de Reims.

Inspired by Pierre Déthune's methods, Olivier Bonville found the vinification of Ambonnay's Pinot Noirs suited to the blend of the cuvée he wanted to create: elegant, fresh, combined with fruity and jovial notes. 

Freshness and lightness characterize the first nose. They gradually give way to greedy aromas of tart red fruits such as redcurrant, but also citrus.  

On the palate, the attack is fresh and persistent coupled with a balanced, clean and pure length. 

Dishes based on raw fish, such as sea bream ceviche or salmon tartare will be particularly appreciated to serve this Champagne.
