This Domaine, coiled in the heart of the Region of Bourgogne in the village of Chorey-Les-Beaune, covers 25 hectares on the prestigious Coast of Beaune
Savigny-Lavières Premier Cru 2023 du Domaine Tollot-Beaut perfectly embodies the balance between Burgundian finesse and minerality. Produced from vines planted between 1943 and 1993, on a terroir of layered limestone (known locally as "laves"), this wine draws its solidity from a structuring soil, while expressing pure, bright fruit.
The Pinot Noir, the only grape variety used for this cuvée, is harvested by hand when fully ripe, then destemmed and sorted with precision. Vinification takes place in open vats for around ten days, with daily punching of the cap and temperature control, guaranteeing a gentle but complete Extraction. Ageing in French oak barrels (30-35% of which are new) then refines the tannic structure and supports the expression of the fruit, without ever dominating.
On the palate, the wine seduces with its silky touch and freshness. The body is precise, supported by elegant tannins and lively acidity that lengthens the finish. The bouquet opens with notes of red berries, lightly spiced, and a perceptible chalkiness that gives it straightness and tension.
This is a wine for moderate ageing, accessible after a few years but which will gain in complexity up to 15 years. A subtle Premier Cru, ideal with roast poultry, veal fillet or cheese with a bloomy rind.
