This Domaine, coiled in the heart of the Region of Bourgogne in the village of Chorey-Les-Beaune, covers 25 hectares on the prestigious Coast of Beaune
Savigny-lès-Beaune 1er Cru Champ Chevrey Monopole 2023 du Domaine Tollot-Beaut is a wine of character, made from a confidential 1.46-hectare parcel planted in 1955, enclosed in the "Les Fourneaux" climat. This southeast-facing monopole is planted on a well-exposed terroir, with a classic density of 11,000 vines/ha, and yields of around 42 hl/ha.
Vinified with precision, the Pinot Noir is completely destemmed, optically sorted, then vatted by gravity. Fermentation takes place over 10 to 12 days in open tanks with floating caps, with daily punch-downs and a controlled maximum temperature of 32°C.
After gentle pressing, the wine is racked for 48 hours before being filled into French oak barrels, 30-35% of which are new. The long, measured ageing process (16 to 18 months) includes a single post-malo racking, guaranteeing preserved substance.
On tasting, Champ Chevrey 2023 is immediately seductive in its fruity expression, with a firm, structured body. The wine displays a beautiful precision of fruit, typical of cherry and redcurrant, enhanced by hints of spice. Its texture, still young, shows good ageing potential - between 4 and 15 years depending on the conditions (while already offering a good reading of the terroir).
Historical and singular, this monopole may have taken its name from the hemp cultivation that used to be practiced on these lands, but its nobility today rests above all on the finesse of the Pinot Noir and the demanding work of the Tollot family.
