Born of an ambitious dream in 2008, Ao Yun, the first Grand Cru from the Himalayan mountains, embodies Chinese winemaking innovation and passion. Nestled in the remote region of Shangri-La, in the heart of Yunnan province, this unique wine was born at an altitude of 2,600 metres, on an exceptional terroir.
Thanks to its particular climate, combining natural coolness and intense ultraviolet radiation, Ao Yun offers an incomparable ethereal expression. The slow ripening of the grapes, aided by Secs sunny autumns, gives this wine a distinctive signature.
Part of the prestigious LVMH group, Ao Yun reflects a heritage of impeccable quality. On 31 hectares, divided into 773 micro-parcels, each vine is meticulously tended by hand, an attention to detail that goes beyond traditional practices.
Harmoniously integrated into a revered environment, Ao Yun relies on 100% organic and regenerative farming practices, perpetuating the ancestral traditions of local farmers.
The fruit of thousands of years of history, Ao Yun illustrates the creativity and innovation characteristic of Chinese civilization. This bold vision pushes the boundaries of winemaking to new heights.
With its twelve vintages, Ao Yun is set to become a timeless icon, a celebration of excellence for generations to come. The adventure continues, and we invite you to experience it with us.
With its deep ruby color, Ao Yun 2021 reveals an exceptional aromatic palette. Its complex nose blends wild berries with herbaceous notes, giving way to nuances of blood orange, dried rose, tobacco, spices and incense as it evolves. On the palate, this medium-bodied wine impresses with its remarkable density, perfectly balanced by an airy lightness, vibrant acidity and a persistent saline finish. Its velvety, perfectly ripe tannins make it already accessible and ready to be savored.
Ao Yun's 2021 vintage is distinguished by regenerative and organic farming practices, carried out entirely by hand with Extraordinary precision. Each vine shoot is carefully treated, requiring four times more effort than in conventional vineyards. That year, exceptional night-time irrigation and manual pruning of the shoots, adjusted according to the type of terroir and the season, ensured optimum quality.
The plots were vinified separately, with the emphasis on gentle Extraction, with more frequent manual pumping-over but smaller volumes to encourage optimal infusion. The wines, tasted at sea level before being blended at an altitude of 2,600 meters, benefit from unique conditions, with oxygen concentration reduced by 25%. Ageing is 60% in stoneware jars and glass vats, and 40% in barrels for 12 months, followed by 8 months in vats before bottling.
